Lemongrass Infused Creme Brulee (EP.2)
Good evening friends! Welcome back to episode 2 of my channel. Today I will be putting a tiny twist on a popular classic: Creme Brulee. This was a dish I did in culinary school that I thought was fantastic, so I decided to share this with all of you. This is another simple dish with only 6 ingredients
INGREDIENTS
1 L of Whipping Cream
6 Egg Yolks
1/2 cup of Sugar (I infused it with 1 stalk of lemongrass)
1 Stalk of Lemongrass
1/2 tsp of Vanilla Extract
Granulated sugar for caramelizing the top of Creme Brulee
Fruits of choice to garnish
PREPARATION
1. Bring the whipping cream, vanilla extract and lemongrass to a very light simmer and steep the lemongrass for 15 minutes (be sure not to boil the cream. Once it starts to simmer, turn off the stove).
2. In a large bowl, whisk the egg yolks and sugar until it turns into a smooth, silky and lighter shade of yellow.
3. Once the whipping cream is ready, slowly temper (gradually add in batches) the whipping cream to the egg yolk/sugar mixture (do not add the cream all at once as it will cook and scramble the eggs).
4. Place 6-8 ramekins into a large roasting pan and slowly pour the mixture around 3/4 full.
5. Pour hot water in the roasting pan to half the height of the ramekin, and bake in the oven @ 325 F for 45 minutes or until cooked.
6.After it is baked, remove the creme brulee from the roasting and put in the fridge for at least 30 minutes or until it is completely cool.
7. Finally, evenly spread around 1 tbsp of sugar on the top and use a blow torch to caramelize the sugar (If you do not have a blow torch, you can either broil the top in the oven or heat up a spoon on a stove top to slowly caramelize the sugar).
8. Garnish with favorite food and enjoy!

Hello everyone! It's been already 2 weeks since I posted my last video. I was focusing on taking care of my son (He's growing so fast!) now I'm back with a blueberry cheese cake recipe. My blueberry puree was getting old so I decided to make this lol. I hope you like it!

Cheesecake cookie base
Icing sugar 60g
Unsalted butter 125g
Egg 25g
Vanilla extract 5g
Pinch of salt
All-purpose flour 185g
Size of cookie: 3 inch diameter cutter (7.5cm)
Bake at 325F for about 12 minutes
(Baking time can be different depends on your oven and the size of cookies)
Blueberry gelee
Blueberry puree 80g
Water 80g
Sugar 20g
Lemon juice 1 tsp (5g)
2 Gelatin sheets (4g)
*You can get 8 fillings
* I made the gelee with half water, half puree to make it clear but I realized that it doesn't really make any difference. If you make this recipe, I think you can make it with only blueberry puree.

Unsalted butter 40g
1 Gelatin sheet (2g)
*You can get 10 fillings

Lemon juice 4g
Heavy cream 130g (Whipped)
