How to Make Soft and Chewy Oatmeal Raisin Cookies - Delicious and Satisfying - The Hillbilly Kitchen
These Oatmeal Raisin Cookies are soft and chewy with a crispy top. There is nothing that compares to these oatmeal cookies right out of the oven. They are delicious and satisfying. They are filling enough for a quick breakfast or to satisfy that late night hunger and they are just sweet enough to satisfy that sugar craving without being too much.
Ingredients:
3/4 cup - Brown sugar
3/4 cup - Regular sugar
1/2 cup - Real butter
1/2 cup - Applesauce
2 - Eggs
2 teaspoons - Real vanilla extract
2 cups - All purpose flour
2 teaspoons - Baking soda
1 teaspoon - Salt
1 tablespoon - Cinnamon
3 1/2 cups - Oats
2 1/2 cups - Raisins or other dried fruit

Ingredients:
* 1 cup (130 g) oat flour(just grind your rolled oats)
* 1 cup (100 g) rolled oats old fashioned
* 3/4 teaspoon baking powder
* 1/4 teaspoon salt
* 2 tsps vanilla extract
* 1/2 cup (113 g) soft butter (not melted)
* 1/2 cup (90g) honey (melt if not runny)
* 1/4 cup (40 g) raisins
Instructions:
1. Preheat oven to 400 F degrees (200 C). Line baking sheet with parchment paper and set aside.
2. In a large bowl mix together soft butter, honey, vanilla, salt, using a spatula, until creamy.
3. Add oat flour, rolled oats, baking powder. Mix until combined.
4. Fold in the raisins.
5. The dough will be wet and sticky. That's okay.
6. Take a portion from the dough (about 2 tablespoons). Roll to form a round shape (1-1,5 inch diameter)
7. Then press it with your palms to flatten it and make a circle of around 2.5 inch diameter. Repeat with remaining dough and make all the cookies similarly. You will get about 8 cookies.
8. Bake at 400 F degrees (200 C) for 13 - 15 minutes or until lightly golden brown in color.
9. Allow to cool 5 - 10 minutes on the baking pan then place them on a wire rack to cool completely.
10. Store them in an airtight container.

Chances are, you've eaten an oatmeal cookie before. But have you ever had a truly GREAT oatmeal cookie? You know: Golden-brown on top, nice and chewy, and just sweet enough? If you've had one, you know what I'm talking about. If not, here's your chance!
To make these cookies, you'll need the usual cookie-baking suspects (flour, baking soda, salt, butter, brown sugar, white sugar, an egg, and some pure vanilla extract), plus the ingredients that make these cookies special: old-fashioned rolled oats and raisins.
Sarah's Tip of the Day:
I love these cookies, but I've been thinking: Why should raisins have all the fun? It hardly seems fair. So try these with dried cranberries or chocolate chips, or a combo.
