Small batch version of a classic green bean casserole made from scratch! Made with sautéed onions, garlic, mushrooms, and cheese with a layer of fried onions as a topping makes this the best green bean casserole ever!

Ingredients
1 (14 ounce) can green beans , rinsed and drained
1 tablespoon olive oil
½ cup chopped onions
1 clove garlic , minced
¼ cup jarred sliced mushrooms
⅓ cup low-sodium chicken broth
¼ cup heavy cream
2 ounces cream cheese , room temperature
¼ cup shredded Gruyère cheese
¼ teaspoon Italian seasoning
¼ teaspoon salt
⅛ teaspoon coarsely ground black pepper
¼ cup fried onions (optional)

Hello my Lovelies! I am starting my 12 Days of Christmas series. A tradition I was to continue each year. On the fourth day of Christmas, Seasoned Cuisine presents to you “Green Bean Casserole.” Green bean casserole is the perfect side dish for every major holiday, especially Thanksgiving and Christmas. My creamy mushroom sauce is made with sautéed onions and garlic and a dash of Worcestershire sauce. Then I topped it with French's Crispy Fried Onions make to add some crunch for balance. Enjoy! GREEN BEAN CASSEROLE
- 1 pound green beans
- 8 oz Baby Bella mushroom (or any mushroom)
- 8 TBSP salted or unsalted butter divided
- 1/2 medium yellow onion
- 4 cloves minced garlic
- 1 1/2 cup heavy cream or half and half
- 1/2 tsp Worcestershire
- 1/2 cup chicken stock
- 2 TBSP all purpose flour
- Salt and black pepper for taste
- 1/2 can French’s Crispy Fried Onions
* Whisk rue for about 2 minutes before adding the chicken stock and milk. Then cook for 4-5 minutes until mixture thickens before adding sautéed onion/mushroom. Add salt and pepper for taste.
* blanch green beans for about 8 minutes with 1 TBSP salt and immediately submerge in ice water.
* Bake casserole for 25 minutes at 350 degrees. Top with fried onions and bake for an additional 5 minutes.

Breakfast Casserole
Ingredients:
8 eggs
13 oz of sliced potatoes, organic, peeled, cut in half, thinly sliced
2 zucchini, organic, thinly sliced
½ yellow onion, thinly sliced
Garlic powder
Salt
Pepper
5 slices of swiss cheese
6 leaves of basil, stacked, rolled and chopped
Olive oil
Directions:
Preheat a large frying pan over medium high heat. Coat the bottom of the pan with olive oil and once it is hot, add the potatoes. Spread them out evenly over the bottom of the pan. Season with salt, pepper and garlic salt and cover with the lid. Let the potatoes cook for 4-5 minutes and then check to see if they are browning. If they are, turn the potatoes over with a spatula, cover and continue to cook. You want as much of the potatoes to brown up as possible. Once done, place the potatoes in a 10 x 10 baking dish evenly over the bottom of the dish.
Slice the zucchini and onion thinly. Add olive oil to the same pan used for the potatoes. Once hot add the zucchini and onion and season with salt, pepper, and garlic powder. Stir and then cover with a lid over medium high heat. You are looking for that caramelized coating just like the potatoes. Stir the zucchini occasionally until browned about 8 or 9 minutes.
Layer the zucchini and onion on top of the potatoes evenly. In a large bowl, crack the eggs season with salt, pepper, and garlic powder and blend with a whisk. Pour the eggs over all the potatoes, zucchini, and onions. Top with cheese of your choice. I used slice swiss but grated Monterey Jack works great too.
Place the casserole in the oven at 350 degrees F. for 15 minutes. Chop fresh basil and or parsley and sprinkle over the top to garnish. This is one of the best casseroles you will ever try!
Tips:
1.Make sure to brown the potatoes really well as well as the zucchini and onion. You will have better control cooking the potatoes separate from the zucchini and onions. You also don’t want to crowd the pan as it will make browning more challenging.
2. You can use any cheeses you like. Monterey Jack is a wonderful melting cheese and works well. Consider other cheeses like cheddar, feta, etc.
