Ingredients: Serves 3
1 lb ground beef 80/20
1 yellow onion
1 tsp sugar
1 tsp fresh thyme; optional
3 slices American cheese
3 slices cheddar cheese
9 slices sourdough bread
2 Tbsp butter
Sauce ingredients
2/3 cup mayo
2 Tbsp Dijon mustard
3 Tbsp ketchup
1 Tbsp Worcestershire sauce
1/4 cup grated parmesan cheese
1 Tbsp sweet relish
1/2 tsp garlic powder
1/2 tsp smoked paprika
2 cloves grated garlic
salt & pepper to taste
In a bowl, add all ingredients and whisk until combined. Set aside.
Then shape your beef into 6 even balls. In a frying pan over medium heat, add oil, onions and sugar. Season with salt and cook until caramelized, stirring occasionally, about 15-20 minutes. In a frying pan toast your bread with butter. You can also use a toaster. (I didn't toast my bread enough)
Heat a cast iron skillet over medium high heat for 3-4 minutes. Then add two beef balls and smash with the back of a spatula wrapped in aluminum foil. Season with salt and pepper, then flip and add cheddar cheese to one and American to the other. Stack you patties and place on a plate.
To assemble, add sauce to the bottom slice of bread, then place the patties and a generous layer of caramelized onions on top. Sauce your other slice of bread and top your sandwich.

Ingredients for onion fries
4-5 medium onions
1 large potato
2 eggs
2 tablespoons of flour
2 tablespoons of cornmeal
a bunch of parsley
1 teaspoon each of salt, thyme, black pepper, cumin and chili flakes
To remove the bitterness of the onion:
1 liter of water
2 teaspoons of salt (16 grams)
For Frying:
vegetable oil

Onion fritters: an easy and quick recipe to try!
If you love onions, you should try this amazing recipe!INGREDIENTS
2 large red onions;
1 tbsp chopped jalapenos;
1 tsp grated ginger;
2 tbsp fresh cilantro, chopped;
1 tsp chili powder;
1 tsp ground cumin;
1 tsp coriander
1 cup rice flour;
Vegetable oil for frying.
METHOD
Slice the red onion and mix it with ginger, jalapenos, cilantro, chili, cumin and a generous pinch of salt.
Crush onions sliced with your hands until some juice comes out. Add rice flour and mix.
When the mixture starts to come together, pour in cold water little by little, until the sticky batter forms.
Let the vegetable oil heat up in the skillet to 180C/350F.
Oil your palms and form onion patties from about ¼ cup of the mixture.
Fry patties for 5-7 minutes, until crispy and deep golden. Serve with your favorite sauce.
