These beautiful meringue cookies are light as air, perfectly sweet, and so easy to make! Great with a cup or coffee and look wonderful on a cookie tray! Meringue cookies are such a delightful addition to the table and so easy to make! I love to flavor mine with a drop of good vanilla but almond and even peppermint are great choices too. Try dipping or drizzling with chocolate for an extra layer of flavor and remember, these make wonderful gifts!.

How to Get 8x as Much Juice From One Citrus?
Have you ever thought about how to get more juice from one citrus? Using citrus is a must for a number of cocktails, but is it really necessary to use one whole citrus for only one cocktail and then throw it away? It’s on us to think more environmentally friendly and try to be sustainable with our hobby/passion/profession. But when it’s also cheaper it’s easier to get the boss on board as well - there’s a method that can get you up to 8 times more juice from each citrus, the juice has a longer shelf life and a more prominent citrus flavor in a cocktail - those are wins all around, right? This is possible thanks to Super Juice - the brainchild of Nickle Morris, a bartender, and owner of Expo Cocktail Bar, in Louisville, Kentucky.
I studied his technique, combined it with Dave Arnold’s formula for acids, and implemented it into my way of making ingredients. Our recipes may be a bit different but I kept the environmentally- and wallet-friendly approach. And so can you! Are you ready for Super Juice?!

In this episode I show you how to make amazing cocktails fast - a delicious pre-batched Old Fashioned that you can turn into a craft cocktail in seconds - with beer foam! When I work at events and weddings I always prepare the ingredients in advance, but with this Old Fashioned and beer foam you have the whole cocktail ready to go, so you can have more time to entertain your guests as you serve them classic and craft cocktails. This pre-batched Old Fashioned is just one idea. I hope I inspired you to make other cocktails with the pre-batched formula as well. Pre-Batched Old Fashioned
· 600 ml (20 oz) Jameson Black Barrel
· 12 ml (0.4 oz) Angostura
· 50 ml (1.66 oz) rich demerara syrup
· 12 drops of 20% Saline Solution
· 200 ml (6.75 oz) water (or stir with ice in the glass)
Mix everything in a bowl, then bottle it. If you need this to be cold as fast as possible, place it in the freezer (but keep in mind that it might freeze if you leave it in there for too long, because of the added water). If you bottle it without adding water, you can store it on the shelf and stir it with ice to chill and dilute before serving.
Stout Foam (0.5 l siphon)
· 220 ml (7.5 oz) Stout Beer
· 0.5 g xanthan gum
· 7.5 ml (0.25 oz) maple syrup
· 4 drops of 20% Saline Solution
· 1 N2O cartridge
Add all ingredients to a blender and blend to combine before pouring in a cream whipper. The recipe is for a smaller, half liter ISI gourmet whip. If yours is 1l double the amounts. Charge with N2O cartridge, shake, and place the cream whipper in the fridge to chill for at least 1 hour. Use it when it’s cold.
Orange Mist
· 30 ml (1 oz) Vodka
· 6 drops organic orange essential oil
Mix and pour in a small spray bottle.
Pre-Batched Stout Fashioned
· 100 ml (3.5 oz) Pre-Batched Old Fashioned
· layer Stout Foam on top
· spray with Orange Mist
Use a double Old-Fashioned glass with a large clear ice cube.

SAUVIGNON BLANC SYRUP RECIPE
Mix equal parts by volume of Sauvignon Blanc wine and sugar
Use a room temperature wine and stir until dissovle
DO NOT HEAT THE WINE
ANCHO PEPPER SYRUP RECIPE
Mix together
100 gr of hot water
100 gr of sugar
4 gr of dried Ancho pepper flakes
Stir until the sugar has dissolved and let infuse until the syrup reaches room temperature
Fine strain and bottle up
HONEY & LAVENDER CORDIAL RECIPE
Infuse one heaped table spoon of dried lavender flowers in 50 gr of hot water and 1 gr citric acid
Let infuse until it reaches room temperature
Fine strain in 100 ml of 1:1 ratio honey syrup
Add 75 ml Lemon juice
Stir and bottle up
