Palak Paneer
Recipe in English:
Ingredients:
• Spinach 6 cups (1 medium Bunch)
• Water 7-8 cups
• Onion 1 cup sliced
• Cashew nuts ¼ cup (optional)
• Green chilies 4-5
• Paneer/cottage cheese 200grams
• Oil 2 tbs
• Cumin 1 tsp
• Ginger paste 1 teaspoon
• Garlic paste 1 teaspoon
• Tomatoes ¼ cup, finely chopped
• Black salt ¼ tsp
• Dried fenugreek leaves 1 tsp
• Garam masala 1 tsp
• Salt 1 tsp or to taste
Directions:
• Wash spinach properly and chop the leaves.
• Boil 7-8 cups of water, add chopped spinach. Let it cook for 3 minutes exactly and strain. Rinse with cold water (it helps in keeping bright green color intact).
• In a blender, puree the spinach without adding water and set aside.
• Take 1 tsp oil, add sliced onion and fry until soft and translucent. In a blender add softened onion, cashew nuts and green chilies and blend until a smooth paste.
• Heat 1 tbs oil in a pan on medium heat and add cumin seeds. Add ginger garlic paste and sauté for 30 seconds. Add tomatoes and cook until soft. Add onion paste and cook for 2 minutes.
• Add spinach puree, black salt, dried fenugreek leaves, garam masala and salt. Mix well and cook for 5-6 mins. Add water if gravy is too thick.
• Cut ½ inch cubes of paneer and shallow fry them in a pan. (This step is optional)
• Add paneer cubes in the spinach gravy and simmer for 2-3 minutes.
• Palak Paneer is ready to serve.

Ajza:
• Palak 6 cups (1 bunch)
• Paani 7-8 cups
• Pyaz 1 cup sliced
• Kaju ¼ cup
• Hari Mirch 4-5
• Paneer/cottage cheese 200grams
• Oil 2 tbs
• Zeera 1 tsp
• Adrak paste 1 teaspoon
• Lehsan paste 1 teaspoon
• Tamatar ¼ cup, finely chopped
• Kala namak ¼ tsp
• Kasuri Methi 1 tsp
• Garam masala 1 tsp
• Namak 1 tsp or to taste
Directions:
• Palak ko achi tarah dho kar chop kar lain.
• 7-8 cup paani ko boil karlain aur palak shamil karain. 4 minte keliye boil hone dain aur palak se paani nikal kar thande pani se guzar lain.
• Blender main palak ki puree banalain.
• Ab ek pan main 1 tsp oil lain aur pyaz ko naram karlain. Blender main pyaz, kaju aur hari mirchen shamil karke paste banalain.
• Ek degchi main 1 tbs oil garam karain aur zeera daal den karkarane pe adrak lehsan ka paste shamil karlain. Tamatar shamil karke gal jane tak pakayen. Pyaz ka paste shamil Karen aur 2 minutes pakayen.
• Palak puree shamil karain. Kala namak, kasuri methi, garam masala aur namak shamil karke kuch dair (5-6 min) pakayen.
• Paneer ko ½ inch cubes main kaat lain aur frying pan main shallow fry karlain (ye step optional hai agar na karna chahen tu paneer ke cubes ko directly gravy main shamil kar lain)
• Paneer ke cubes ko gravy main shamil kar ke 2-3 min mix karain.
• Mazedaar Palak paneer tayar hai.

Full Written Recipe for No onion no garlic palak paneer
Prep time: 15-20 minutes
Cooking time: 202-5 minutes
Serves: 4-5 people
Ingredients:
• Fresh spinach 2 bunch
• Fresh coriander 2 tbsp
• Fresh mint 1 tbsp
• Green chillies 2-3 nos.
• Ginger 1 inch
• Paneer 600-700 gm
For gravy
• Ghee 2 tbsp
• Cumin seeds 1 tsp
• Whole red chillies 2-3 nos.
• Bay leaf 2-3 nos.
• Cinnamon 1 inch
• Ginger 1 inch (chopped)
• Green chillies 2-3 nos. (chopped)
• Asafoetida 1 tsp
• Red chilli powder 1 tbsp
• Turmeric powder ½ tsp
• Cumin powder 1 tsp
• Cashew paste 2 tbsp
• Curd 1/3rd cup
• Salt to taste
• Black salt 1 tsp
• Wheat flour 1 tbsp
• Fresh cream 2-3 tbsp (optional)
• Garam masala 1 tsp
• Lemon juice 1 tsp
Method:
• Set water for boiling in a stock pot, blanch the spinach briefly for 10-15 seconds in boiling water and immediately transfer in ice cold water, doing this step helps to retain the bright green colour of the spinach.
• Add the blanched spinach in a grinding jar, along with fresh coriander, fresh mint, green chillies & ginger, add water as required and grind to make a fine puree. Keep it aside to be used later.
• Cut the paneer in your preferred shape and size, set a pan on medium heat, add enough oil for shallow frying the paneer, fry them from all side until golden brown in colour.
• Further let the fried paneer sit in warm water until used, doing this step helps the paneer to be moist.
• For making the gravy, set a wok on medium heat, add ghee, jeera, bay leaf, cinnamon, ginger & green chillies, stir once and lower the flame, further add, powdered spices, stir & cook on medium low flame for 1-2 minutes, add little water to avoid the burning of spices.
• Further add, cashew paste, curd & salt to taste, stir continuously & cook on low flame for a minute.
• Further increase the flame to medium heat & cook until the ghee separates.
• Now, add the spinach puree & mix well, add wheat flour to thicken the gravy, stir & cook for 3-4 minutes on medium flame.
• Now add the shallow fried paneer that’s been resting in warm water, add some fresh cream, garam masala and lemon juice. Mix gently and cook for a minute.
• No onion no garlic palak paneer is ready, serve hot with roti of your choice.
