How To make Pasta with Feta and Bitter Greens
6 tb Olive oil
4 c Onion, chopped
8 c Bitter greens - spinach and
- escarole 1 lb Penne or fusilli
3/4 lb Feta cheese
Salt Pepper, freshly ground Parmesean cheese Wash, dry, and coarsely chop greens. In LARGE skillet or wok, saute onions 10 minutes or more, until tender. Put water on to boil for pasta. Add
chopped greens to skillet or wok. Cook 10 to 15 minutes over medium-high heat. While greens are cooking, cook pasta. When pasta is ready, drain. Crumble feta into greens, stirring to make a thick sauce. Stir in drained pasta. Cook a few minutes to warm through. Serve immediately with freshly ground pepper and freshly ground parmesean cheese to taste.

This recipe for Broccoli and Feta Pasta is one of my go to pasta recipes for summer time. It is also Weight Watcher friendly. It is a light and fresh pasta dish with a bright flavor from the lemon zest and red pepper flakes.

Ingredients:
1/2 pound uncooked whole wheat spaghetti
4 tsp olive oil
3 garlic cloves, diced
2-3 cups broccoli florets
grated zest of one lemon
1/2 tsp salt or to taste
1/2 tsp red pepper flakes or to taste
1/3 cup crumbled reduced-fat feta
Cook pasta according to package. While pasta is cooking, heat olive oil in large pan and cook garlic for about a minute. Add in broccoli and cook about five minutes or until slightly softened. Add cooked pasta (reserve some pasta water) and remaining ingredients to a bowl and mix together. If desired, add some pasta water to moisten.

Ingredients -
400g (14oz) - Spaghetti
1 Tbsp (20ml) - Olive Oil
1 1/2 Tbsp (21g) - Unsalted Butter
4 - Garlic Cloves, Thinly Sliced
1 - Whole Lemon, Zest Thinly Sliced
1/2 - Lemon, Juiced
1 Cup (250ml) - Thickened Cream
10g (0.35oz) - Curley or Flat Leaf Parsley, Roughly Chopped
Seasoning To Taste
Notes -
This recipe is strong on lemon so adjust it to your taste. The first time I made it, I put way too much lemon juice in (I used 1 whole lemon) and it ruined the dish. I've now reduced it to half and I think it's the perfect balance. If you’re concerned, you can add the zest and cream and squeeze 1 quarter of a lemon into the sauce and adjust that way. Half a lemon works well though, so don’t worry.
