Roast Eggplant & Cherry Tomato Sauce, Spaghetti & Herby Basil Chickpeas Recipe - The Good Oil
Ingredients (Roast Eggplant & Cherry Tomato Sauce)
2 large eggplant, split into 4 length ways and then cut into 4 – 5 chunks
6 T sunflower oil
4 garlic cloves, crushed or sliced
1 tin of cherry tomatoes
200g fresh cherry tomatoes, halved
½ tsp dried oregano
Handful of fresh basil
2 – 4 anchovies (optional)
Extra basil, to garnish
Ingredients (Lemon Herb Chickpeas)
1 tin chickpeas, drained and rinsed
2 T chopped herbs – we used parsley and basil
2 T The Good Oil Sunflower oil
Zest of half a lemon, plus 1 T of lemon juice
To Serve
Cooked spaghetti
Basil leaves
Method (Roast Eggplant & Cherry Tomato Sauce)
Place the eggplant, sunflower oil, garlic, tinned cherry tomatoes and fresh cherry tomatoes, oregano and basil in an ovenproof dish/roasting tray. Season well and tuck in the anchovies. Roast in a 180 – 200 °C oven for 45 minutes, giving it a stir half way through cooking. The eggplant should be nice and tender, and the sauce reduced and bubbling.
10 minutes before the sauce is cooked put your pasta into boiling salted water, and cook according to packet instructions. Serve the sauce with the hot pasta, topped with the Herb Lemon Chickpeas and basil leaves.
Method (Lemon Herb Chickpeas)
Mix the chickpeas with the herbs, sunflower oil, lemon zest, lemon juice, and season.

SPAGHETTI WITH EGGPLANT AND TOMATO SAUCE RECIPE || Vegan Aubergine Pasta Recipe || HIDDEN VEGGIES!
In this video, we show you how to make delicious Spaghetti with eggplant (also known as aubergine or brinjal) and tomato sauce. This is the perfect recipe for vegans, vegetarians, and also those who want to consume more veggies into their diet. It is particularly great for children (and some adults) who will not even realize they're eating eggplant and is secretly hidden in the pasta sauce! The eggplant and tomato sauce is rich, thick and packed full of flavour. It can be used as a base for any type of pasta, but today we chose to serve it with silky spaghetti.
To make the eggplant pasta sauce recipe, you will need:
2 small or 1 large eggplant (aubergine)
3 tbs olive oil
4 large garlic cloves
1/2 medium-sized onion
1 green pepper (you can use capsicum bell pepper or another green pepper that you have available)
2 large tomatoes
1 tbs tomato puree
1 tsp salt (or to taste)
1/2 tsp black pepper
1 tsp paprika
1 tsp red pepper flakes
1 tsp dried basil
1 tsp dried thyme
1 tsp garlic granules
1-2 cups hot water
pasta water (water from boiling the spaghetti or pasta)
finely chopped parsley
cooked spaghetti (or any other type of pasta)
optional: garnish with parsley and grated cheese of your choice (including vegan cheese)
The aubergine and tomato sauce is incredibly rich and flavourful. It can be used as a base for lasagne, pasta bakes or even used as a dip. You can even add mince meat to this pasta sauce and no one will ever know that it contains the added goodness from eggplants!
This eggplant pasta is inspired by the Sicillan pasta alla norma which is a famous Italian pasta dish. It is a fabulous easy dinner dish that will surely be loved by all the family.
