How To make Pear & Fig Strudel
1 lb Figs
1 2/3 c Unsweetened pear juice
10 ea Ripe pears
1 ts Cinnamon
1/2 ts Allspice
1/2 lb Filo dough
1/2 c Melted butter
1 c Toasted wholewheat bread
-- crumbs 1/2 c Honey
1/2 c Chopped hazelnuts
Cover the figs with pear juice & bring to a boil, let simmer for 25 minutes. Puree in a blender. Peel & core the pears & chop into bite-sized pieces. Combine fig paste, pears & cinnamon & allspice. Preheat oven to 375F. Butter a 9"x14" baking pan. Layer 10 filo sheets, 2 at a time, brushing butter on every second sheet & spinkling it with breadcrumbs. Spread pear filling evenly over last sheet. Cover with another 10 sheets of filo, layered as before with butter & breadcrumbs. Score the top sheet into pieces approx. 3" square. Bake for 35 to 40 minutes & then allow to cool for 15 minutes. Heat the honey, stirring gently till warm. Drizzle over strudel & top with nuts. Cut with a sharp knife. "Sundays at Moosewood Restaurant Cookbook"

Apple strudel with nuts, dates and ready-made puff pastry is easy to make and ready to eat in no time.
❗️ The are NO ingredients of animal origin, so the recipe is suitable for both vegans and vegetarians.

° Apples - 5 pcs
° Lemon - ½ pcs
° Ready puff pastry - 1 sheet 275 g
° Walnuts - 30 g
° Pecans - 30 g
° Dates - 100 g
° Sugar - 4 tablespoons
° Breadcrumbs - 30 g
° Cinnamon - 1 tablespoon
° Maple syrup
You can replace the nuts with any of your choice. The dates can be replaced with dried apricots, figs or raisins.

Nonna's Italian Pear Almond Cake (e105)
Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), makes use of her wonderful pear tree harvest by baking a very fruity Italian Pear Almond Cake.
Here are the ingredients that you will need:
- 8 pears to yield about 5 cups / 750 grams of peeled pear chunks
- 4 large eggs
- 1 cup of sugar / 200 grams
- 2 ounces of Amaretto / 60 ml
- 6 ounces of olive oil / 180 ml
- 2.5 cups of almond flour / 250 grams
- 3/4 cups of all-purpose flour / 120 grams
- tsp of baking powder / 4 grams
- pinch of salt
- 1 cup of shaved almonds / 70 grams
- powdered sugar for dusting
Preheat your oven to 375 F / 190 C and grease a 10-inch (25 cm) springform pan. Nonna starts with about 8 pears which she peels and cubes to create about 5 cups of pear chunks. Of course, you could use fewer pears, but apart from being super moist and healthy, Nonna prefers a fruitier cake.
Beat eggs, add sugar, Amaretto, and oil until fluffy. In a separate bowl, mix dry ingredients: almond flour, flour, salt, and baking powder. Slowly blend dry ingredients into the wet ingredients bowl until fully mixed. Then fold in the pears by hand, pour into the greased pan, and bake for approximately an hour. Test with a strand of uncooked spaghetti, skewer, or toothpick to ensure fully cooked - especially the center.
Allow to cool for about 10 minutes, then remove springform sides. Once the top is cool, dust with powdered sugar.

Puff Pastry Braid Stuffed with Spicy Gorgonzola PDO, Dried Fruit, Pears and Bacon
INGREDIENTS
400 g Spicy Gorgonzola PDO
1 rectangular puff pastry roll
50 g speck
30 g mixed nuts
2 pears
1 egg yolk + 1 tablespoon of milk
pepper
thyme
1 lemon
Coarsely cut the dried fruit and set aside in a bowl. Peel the pears, dice them and transfer to a bowl with acidulated water.
Roll out the puff pastry and place the slices of bacon in the centre, leaving some space around them.
Place the Spicy Gorgonzola PDO, chopped dried fruit and pear cubes on top. Add pepper and thyme. Use a sharp knife to make diagonal cuts to the right and left of the filling.
Close the initial part of the dough over the filling and alternate the strips of dough by crossing them. Brush the surface with beaten egg yolk with a spoonful of milk.
Preheat the oven to 200° and cook for 20/25 minutes. Serve the braid of puff pastry lukewarm.
