Overripe pears? Pear Streusel (Tea) Cake it is!
What to do with old pears?
Muffins? Pear sauce? Jam?
How about a tea cake?
Tea cake cause we don’t drink coffee...
So, we eat this rich moist cake with a cup of tea.
My favorite tea is Lemon balm, Turmeric and Raspberry leaf!
No caffeine, yes! It is so much better for you!
FRESH PEAR STREUSEL CAKE RECIPE
2 and 1/2 cups of All purpose flour
2/4 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup coconut sugar
1 teaspoon salt
3/4 cup oil ( I used ghee )
1 beaten egg
1 cup buttermilk
( I used whole milk plus lemon juice )
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda
2 and 1/2 cup of fresh ripe pears (cored, peeled and chopped)
Topping:
1 cup chopped choice of nuts ( I used pecans! )
1/2 teaspoon ground ginger
- Preheat oven to 350 Farenheit. Place parchment paper in the springform pan (10 inch). Set it aside.
- Mix flour, sugars, cinnamon, salt, nutmeg and oil in a large mixing bowl. Set aside 1 cup of the mixture for the topping.
- Stir in the remaining ingredients: milk, egg, vanilla, baking soda, baking powder and the chopped pears.
- Scrape the batter into the pan.
- In a medium bowl, mix the reserved crumbs and the chopped nuts. Sprinkle it over the top of the cake.
- Bake it for about an hour or until an inserted toothpick at the center comes out clean. Cool, remove sides of the springform pan.
- Enjoy your cake with a cup of tea!

BETH’S PEAR SPICE CAKE
Makes a 9x5 loaf
PRINT RECIPE HERE:
INGREDIENTS:
3/4 cup (180ml) of melted butter
1/3 cup (80ml) vegetable oil
¾ cup (135g) brown sugar
3 eggs
1/3 cup (80ml) of water
1 ½ (7.5ml) tsp vanilla extract
1 ¾ (210g) cup flour
1 tsp (5ml) baking soda
¾ tsp (3.75ml) salt
1 tsp (5ml) cinnamon
¼ tsp (1.25ml) ground ginger
¼ tsp (1.25ml) nutmeg
1/8 tsp (large pinch) ground cloves
2 ripe pears, any variety
1 tbsp (5g) old fashioned oats
dust with powdered sugar
METHOD:
Preheat oven to 350F (175C) and spray a 9x5 (23cm x 13cm) loaf pan with baking spray. Set aside.
In a large mixing bowl combine the butter, oil, brown sugar, eggs, water and vanilla. Whisk until smooth.
In a medium sized mixing bowl combine the flour, baking soda, salt, and spices. Whisk until combined.
Add the dry ingredients to the wet ingredients, whisking in thirds until combined.
Transfer batter to the loaf pan. Top with the sliced pears standing upright in alternating pattern. Sprinkle with oats.
Bake for 40-45 minutes until golden brown and risen and a toothpick comes out clean.
Allow to cool and remove cake from the tin and slice!

This pear cake recipe is the best cake recipe ever. Pear cake is type of cake, which has pears in it. Pears are a mild, sweet fruit with a fibrous center. They are rich in important antioxidants, flavonoids and dietary fiber and pack all of these nutrients in a fat-free, cholesterol-free, 100-calorie package. Consuming pears may help with weight loss and reduce the risk of developing cancer, hypertension, diabetes, and heart disease, if eaten as part of an overall healthy diet. Pears are great ingredient in cakes, becouse they are sweet and very soft after baking. You can find many variations of pear cakes, as pear upside down cake, italian pear cake, or french pear cake also called Délicieux aux Poires.
This amazing cake can be served as a dessert, for birthday, anniversary, date but also as breakfast. It is one of the best cake recipes ever. As plus, it is really easy cake recipe.

Ingredients:
150g of flour
100g of sugar
2 eggs
3 TBSP of oil
100ml of milk
1 pack of baking powder
4-5 pears
On top:
1 egg
1 vanilla sugar
80g of melted butter
Instructions:
At first, mix eggs, then add sugar and mix it few minutes until foaming. Then add oil, milk, flour and baking powder.
Wipe baking tin with lard and sprinkle with flour, or you can use baking paper, which is easier. Add first half of pastry into baking tin, than put sliced pears on top. It does not have to be perfect, but try to add pears to all empty places. Then add other half of pastry on top and try to cover all of the pears.
Put the cake into oven and bake it for 20 minutes on 180 degrees C. While cake is baking, mix 1 egg, vanilla sugar and melted and COOLED butter. It is very important to cool the butter, if you do not want to have scrumbled eggs instead of best pear cake.
After 20 minutes of baking, take out the cake from oven, skewer the top with fork and then add prepared mixture on top. Bake it for another 20 minutes at the same temperature as before (180 degrees C). Take out the cake from oven and let it cool down. Serve as a dessert, or for breakfast.
Your best cake is done! Enjoy your sweet dessert :)
