How To make Pecan Loaves
1 1/2 c Sifted all-purpose flour
1 tb Baking powder
1 ts Salt
1/2 ts Mace
1/2 ts Nutmeg
3/4 c Brown sugar, firmly packed
1 c Chopped pecans
1 1/2 c Quaker Oats, uncooked
-- (quick or old-fashioned) 1 1/3 c Milk
1 Egg; beaten
1/4 c Vegetable oil
Sift together flour, baking powder, salt and spices into bowl. Stir in sugar, pecans and oats. Add remaining ingredients; stir only until dry ingredients are moistened. Pour batter into 3 greased empty cans, about 2 cup capacity. Bake in preheated moderate oven (350 F.) about 50 minutes. Loosen edges; remove from cans immediately; cool thoroughly. Wrap cooled bread and store one day before slicing. NOTE: For variety, use 1 cup chopped pitted dates or prunes in place of pecans in above recipe. Hi Everyone!
Today we will be making a delicious & moist citrus loaf; it's filled with an orange & pecan flavor! Your house will smell amazing!
Recipe:
zest & juice of 1 very large orange or 2 medium oranges (about 1/3 cup)
2 cups all purpose flour
1-1/4 cups sugar
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 melted butter
1/2 cup chopped toasted pecans
1 teaspoon vanilla extract
Icing:
1-1/4 cups icing sugar
3-4 tablespoons milk

APPLE BANANA PECAN NUT LOAF
Ingredients
2 granny smith apples
1½ cups toasted pecans, coarsely chopped
2¼ cups refined flour (maida)
2 teaspoons cinnamon powder
2 teaspoons baking powder
¼ teaspoon baking soda
A pinch of salt
1 tablespoon castor sugar
20 grams butter + to grease
¾ cup light brown sugar
3 eggs
1 teaspoon vanilla essence
1 cup light olive oil
2½ cups mashed ripe bananas
2 tablespoons honey
Method
1. Preheat oven to 180º C.
2. Sift the flour, cinnamon, baking powder, baking soda and salt
in to a large bowl.
3. Peel, core and coarsely chop granny smith apples and put into
another bowl.
4. Melt butter in a non-stick pan. Add apples and two
tablespoons brown sugar and cook, stirring, for five minutes or
till apple is tender.
5. Put eggs, remaining brown sugar and vanilla essence in a third
bowl and beat well.
6. Add olive oil and mashed bananas and beat till just combined.
7. Add flour mixture, one cup pecan nuts and cooked apples and
mix well with an electric beater.
8. Pour this mixture into a greased loaf tin, top with remaining
pecan nuts and drizzle honey on top. Place the tin in the
preheated oven and bake for forty five to fifty minutes.
9. Remove from oven, cool, remove from the tin, slice and serve.
