How To make Pecan Penuche
2 c Dark Brown Sugar; Firm Pack
3/4 c Milk
1/8 t Salt
2 1/2 tb Butter; In Small Pieces
1 t Vanilla
3/4 c Pecans; Chopped
Oil a jelly-roll pan or an 8 X 8-inch pan. Combine the sugar, milk and salt in a heavy 3-quart pot, stirring to mix well. Place over medium heat and bring to a boil, stirring constantly, until the sugar dissolves. Cove and let boil for 2 to 3 minutes. Uncover and wash down the sides of the pot with a pastry brush dipped in cold water. Continue to boil, over medium heat, to the firm ball stage (240-250 degrees F.), stirring only if it starts to burn. Remove from the heat and immediately place the pot in a larger pot filled with cold water; this will stop the cooking process and bring the temperature down. Drop in the butter and let cool slightly, without stirring. beat until it starts to thicken, add the vanilla and the pecans and continue to beat until the candy loses some of its gloss. Spread evenly in the pan and mark into squares. When firm, cut into pieces and store in an airtight container. From Fannie Farmer's New Cookbook

Spiced Pecans Penuche Nuts
Penuche Walnuts:
1 1/2 cups granulated sugar
1/2 cup sour cream
1 1/2 teaspoons pure vanilla extract
1-16oz bag Walnut Halves
Add sugar, sour cream and vanilla to a pot, stir over high heat until it comes to a boil. Stir often while it bubbles and boils for 4 minutes. Take off heat add walnuts, stir til combined. Spread on parchment paper to cool 5-10 minutes.
Spiced Pecans:
1 large egg white
1 tablespoon water
3/4 cup of granulated sugar
1 teaspoon kosher salt
1 teaspoon ground ginger
1 teaspoon ground coriander
2 teaspoons ground cinnamon
1-16oz bag of Pecan Halves
Preheat Oven 300’
Line a baking sheet with parchment paper or tinfoil, spray with non-stick spray.
Whisk egg white with water till frothy. Add pecans, toss to coat
In a separate bowl mix sugar, salt, ginger, coriander and cinnamon
Add the sugar mix to the pecans toss to coat, spread evenly on baking sheet.
Bake at 300’ for 20 minutes, take out of oven toss them with spatula put back in oven for another 15 minutes
Toss again when they come out of oven let them cool 5-10 minutes, store in air tight container

Penuche Fudge
1 Can (5 Oz) Evaporated Milk
1 1/2 Cups Light Brown Sugar, tightly packed (10.75 Oz)
½ Cup Unsalted Butter (4 Oz)
1 ½ Cups Mini Marshmallows
1 1/2 teaspoons Vanilla Extract
½ Cup Walnuts, chopped (2 Oz)
1.Spray a 8” x 8” inch loaf pan with non-stick cooking spray. Line with parchment paper.
2. Bring evaporated milk, brown sugar, and butter to a boil in a medium saucepan, stirring constantly. Reduce heat and simmer for 5 minutes. Remove from heat and stir in Marshmallow and Vanilla until smooth, fold in nuts.
4. Spread mixture in pan, smoothing top. Refrigerate, uncovered, until firm, about 25 minutes. Unmold fudge using plastic overhang, and discard plastic. Cut into 18 pieces.

Brown Sugar Pecan and Bacon Fudge (Penuche)
This is a new twist on an old favorite. I love brown sugar fudge (also called penuche), as does my family. Lately, I've been seeing recipes for bacon fudge on in the 'net, but they're all based on chocolate fudge, which makes no sense to me whatsoever. Brown sugar seems like much more of a natural partner to the bacony goodness, so this is my humble offering, cooked up in a spare moment on Christmas Day 2011
