How To make Pecan Pralines Dupree
2 c Sugar
1/2 c Light corn syrup
1/2 c Water
2 c Pecan halves
1/4 c Butter
1 T Vanilla
Heat the sugar, syrup, water, and pecans in a heavy saucepan until the sugar is disolved. Bring the mixture to the boil, stirring occasionally, until it reaches the soft ball stage (240F). Remove the saucepan from the heat and add butter and vanilla. Allow candy to cool. Whip until the mixture gradually changes to an opaque color and becomes creamy. Drop by tablespoonfuls onto a buttered cookie sheet and allow to harden. Makes two dozen. From Nathalie Dupree's New Southern Cooking Nathalie Dupree writes, "Pralines are traditionally given as Christmas gifts. Their sweetness will linger in your mouth long after the candy is gone."

Pecan Pralines | 12 Days of Cookiemas

Pecan Pralines
Yields 8 large pralines
1 c Light Brown Sugar
1 c Granulated Sugar
½ c water
2 Tbsp. Salted Butter
2 tsp. Vanilla Extract
1 c Pecan Halves, toasted (350* for 10-12 min)
Add the sugar and water to the sauce pan. Cook over low heat, stirring constantly with a wooden spoon. Once the sugar is dissolved in the water (there will still be some sugar crystals), remove the pot from the heat. With a damp paper towel, wipe sugar grains from the sides of the sauce pan above the liquid level.
Return the sauce pan to medium heat and clip a candy thermometer to the side of the pot. Cook until the mixture reaches 240*. Remove from heat and immediately add the butter, vanilla, and pecans. Begin beating with a wooden spoon until the mixture is just slightly thick and begins to look cloudy.
Quickly drop heaping fist sized spoonfuls onto newspaper covered with wax paper. Cool until firm.
