How To make Penne with Chicken
3/4 lb Boneless chicken breasts
1 1/2 ts Olive oil
1/2 c Green onion; chopped
3 Garlic cloves; crushed
28 oz Ital. tomatoes; with juice
12 Fresh basil leaves; chopped
1 Can Pitted ripe olives;drain
1/2 ts Hot pepper flakes; crushed
10 oz Penne; or other tube pasta
3 oz Part-skim mozzarella; diced
1 tb Fresh parsley; chopped
1/2 c Fresh Parmesan; grated
Earlier in the day, add enough water to the skinned chicken to cover it. Poach chicken in simmering water (uncovered) until chicken is no longer pink. This will take about 8 minutes. Allow chicken to cool in poaching liquid. (I put it in the refrig. rather than leave it at room temp. Cooling it in the liquid makes it more tender) Later, remove chicken from poaching liquid and chop it into small or bite-size pieces. Save the poaching liquid to add to the water you're going to cook the pasta in. In large non-stick pan, cook the onion and garlic in heated olive oil until softened. Add hot pepper flakes and tomatoes and juice. Cook about 30 minutes over med. heat until sauce thickens. Cook penne in poaching liquid with additional water as needed. Combine chicken with the sauce mixture in serving bowl. Add parsley and cheese. Sprinkle with parmesan and serve immediately. So you wanna cook some pasta but all you got is chicken? Are you tired of the bourgeois telling you not to put chicken in your red sauce? Well we got you covered. This Chicken Penne Pasta has lots going on with minimal difficulty to actually make.
You gonna need
• 2 chicken breasts @$3.00
• 1 tablespoon olive oil
• 1/2 medium yellow onion @.70
• 1/2 bell pepper chopped@.50
• 3 cloves of garlic minced @.10
• 1/2 teaspoon EACH salt, pepper, & garlic powder
• 1 can marinara sauce @.90
• 1/2 cup mozzarella or Italian blend cheese @$2.00
• 1/4 cup Parmesan cheese @.50
• 3 cups cooked pasta 1.5 cups dry pasta @.35
• Total @$6.50
Instructions
1. In a medium saucepan, bring 2 cups of salted water to boil, pour 1.5 cups of uncooked pasta and 1 tsp salt into the water. Cover and allow to cook for 10 minutes.
2. While the pasta is cooking, cut chicken breasts and, onion and bell peppers. Heat 1 tablespoon oil in a heavy-duty pan or pot over medium-high heat. Add the onion and bell pepper and saute for 1-2 minutes or until softened. Add the garlic and sautee 30 seconds or until lightly golden. Add the chicken, salt, pepper, & garlic powder and saute until the chicken is browned and almost cooked through.
3. Add the marinara sauce and allow to simmer for 5 minutes while the pan is covered. After 5 minutes, drain the water from the pasta and pour pasta on the chicken mixture. Mix well, add the cheese and turn off. The cheese will melt from the heat of the pan. If desired, broil the cheese under the broiler in the oven until bubbly.
4. Top with Parmesan and enjoy!

Chicken Arrabiata Ingredients:
2 tbsp olive oil
4 to 5 cloves garlic (finely chopped)
100 gms boneless chicken breast pieces
1 tbsp red chilli flakes
1 cup tomato concasse
2 tbsp tomato puree
4 to 5 fresh basil leaves (finely chopped)
1 sprig of thyme
1 1/2 cup boiled pasta of your choice
salt & pepper to taste
1 tbsp Extra Virgin Olive Oil for garnish
1-2 olives sliced
grated cheese
Method:
- Heat the olive oil in a pan.
- Add the finely chopped garlic and let it cook for a while.
- Add the chicken pieces and saute them slightly.
- Then add a generous quantity of the tomato concasse followed by the tomato puree.
- Mix them well and let it cook for a while.
- Add the freshly chopped basil leaves and thyme to the above ingredients.
- Add the pasta and give it a nice stir so that it mixes with all the other ingredients and absorbs maximum flavors.
- Add the seasoning ingredients: salt and freshly ground pepper.
- Add a little bit of water to ensure that the pasta remains moist.
- Pour in little bit of olive oil for the glaze and fresh aroma.
- Garnish the hot pasta with some chopped basil leaves and olives and also pour little olive oil over the pasta.

Ingredients:
200 – 250 g Penne Pasta
400 ml water
½ tsp. Salt
1 tsp. Oil
250 g Chicken thigh fillet (cut into strips)
1 medium white onion (thinly sliced)
4 cloves of garlic (minced)
220 ml fresh milk
350 ml cream (add more if you want it creamier)
250 – 300 grated mozzarella cheese (add more if you really like cheese)
Bunch of Spinach leaves (washed and drained)
100 g Parmesan cheese
Salt
Dash of 4 seasons peppercorns mills
