Pasta Recipe with Snap Peas, Basil, and Spinach - One Pot Dinner - Everyday Food with Sarah Carey
It's true: Boiling water and a bit of stirring are the only techniques you need to make today's one-pot recipe. I love that! I also love that it tastes like so much more work than it is. You can convince people you spent hours blanching the bright vegetables and making the light-yet-creamy sauce.... I won't tell!
Sarah's Tip of the Day:
Because it's mid-March and spring is almost here (can you believe it?) we're going to use some spring produce: snap peas, basil, and spinach. Cook those with some short pasta, such as penne or gemelli, then toss with heavy cream and some grated Parmesan to make a quick creamy sauce. Watch the video and I'll show you my favorite two-second trick for adding flavor to your pasta as it boils. You'll use it all the time!

Prep Time: 15 minutes
Total Time: 25 minutes
Serves 4
Ingredients:
Coarse salt and ground pepper
3/4 pound short pasta, such as gemelli
3 garlic cloves, halved
8 ounces snap peas, halved
10 ounces baby spinach
1/2 cup fresh basil leaves
1/3 cup heavy cream
3 ounces Parmesan, grated (3/4 cup)
Directions
In a large pot of boiling salted water, cook pasta and garlic 1 minute less than package instructions. Add snap peas and cook 30 seconds. Add spinach and basil and stir once to wilt. Reserve 1/2 cup pasta water, then drain.
Add cream to pot and heat over medium-high until bubbling. Return pasta mixture and 1/4 cup pasta water to pot and cook, stirring, 2 minutes. Stir in Parmesan. If necessary, add remaining pasta water to create a light sauce that coats pasta. Season with salt and pepper.
Cook's Note: One Pot - Cooking the vegetables along with the pasta makes for easy cleanup.

This Penne with Mushrooms & Peas, shows just how great the pasta works will all kinds of ingredients. The tubes help soak up the sauce and carry the flavors through in every time, and the size make penne really easy to eat.
For this recipe, I cook down a good amount of crimini mushrooms, until the flavors are nicely concentrated and the mushrooms have a great texture. 1 onion

HEALTHY LENTIL PENNE PASTA FOR KIDS:
Preparation time: 10 minutes
Cooking time: 25-30 minutes

Ingredients:
● 1 Cup Penne Pasta (I used red and yellow lentil pasta)
● Water left after boiling pasta (pasta water) for cooking the pasta 2-3 tbsp) and for the sauce (1/4th cup).
● 2 tbsp Butter
● Half medium size Red Onion finely chopped
● 2 finely chopped large Garlic Cloves
● 2 Tomatoes to make puree (I prefer fresh tomatoe puree)
● 1/2 tsp Salt or as per taste
● 1/8th tsp Chili Flakes
● 1/8th tsp Black Pepper Powder (Kali Mirch)
● 1/2 tsp Cumin powder (Jeera)
● 1 tbsp Tomato Ketchup
● 1/2 tsp Oregano
● 2 tbsp Grated Cheese (I prefer Parmesan )

Process:
● Boil water in a pot and add pasta to it. Turn off the heat and let the pasta sit for 7-10 mins in water until the pasta feels soft.
● Drain the water from pasta and keep aside the drained water. This wate will be used for cooking the pasta and making the sauce.
Prepare Sauce
● In a wok/pan add 2 tbsp butter and heat it (medium to low heat).
● Once the butter melts add finely chopped onions and saute for 2-3 mins until onions look translucent.
● Add finely chopped garlic and saute for 2-3 mins until the garlic looks slightly cooked (raw smell goes away).
● Once the onion and garlic looks cooked, add tomato puree. You can use readymade tomato puree, or prepare the puree by blending the tomatoes in a blender.
● Mix well and cook the until the tomato juices dry up (medium to low heat).
● After adding puree to pan, cook on medium heat, until the Tomato juice dries up.
● Add spices and tomato ketchup and mix the sauce well.
● Add around 2-3 tbsp pasta water (which we kept aside earlier) to the spices. Mix well together and put a lid on the sauce, for 2-3 mins, to cook on low to medium heat.
● Once the sauce is done add pasta to the sauce and mix well.
● Add 2 tbsp pasta water and put the lid back on and cook for another 2-3 mins on low to medium heat
● Add grated parmesan cheese or whichever cheese garnishing you prefer and serve hot.
● Don't forget to Eat and Greet!
