How To make Philadelphia Okanagan Cheesecake
1 1/2 c Crushed ginger cookies
1/2 c Toasted pecans; chopped fine
1/4 c Butter; melted
3 8-oz packages cream cheese
Softened 1 c Sugar
1/2 ts Lemon juice
1/2 ts Vanilla extract
3 Eggs
2 Apples; sliced and sprinkled
With sugar and cinnamon 1/2 c Apple jelly; melted
Heat oven to 350F. Combine cookie crumbs, pecans and butter, press onto bottom and 2" up the sides of a 9" springform pan. Bake 10 minutes. With an electric mixer, beat cream cheese, sugar, lemon juice and vanilla until smooth. Beat in eggs one at a time, just until blended. Pour over crust. Top with apple slices in a pinwheel pattern. Bake 50 minutes or until set. Cool. Refrigerate overnight. Just before serving, spoon jelly over surface. Garnish as desired. Canadian Living October 1993

BC Buds Garlic Blueberry Spice Pack
I took our BC Buds Garlic Blueberry Spice Pack and made a delicious salad dressing using grapeseed oil and white wine vinegar. Simply adding the spice pack to a oil produced a marinade for any meat or a sauce for drizzling over cheese. Adding balsamic vinegar to that marinade oil creates a dipping sauce for bread. For a easy salmon dinner drizzling the blueberry marinated oil and brown sugar it becomes a blueberry candy salmon.

Waffles and cherry salsa
Serves:4
Ingredients for salsa:
● 400 g cherry
● 30 g honey
● 1 tsp lemon zest
● 50 g dried cranberries
● 50 g roasted pistachios
● small bunch of fresh mint
Ingredients for waffles:
● 150 g flour
● 5 g baking powder
● 30 g sugar
● ¼ tsp salt
● 250 ml milk
● 1 egg
● 30 g butter
● 1 tsp vanilla extract
Instructions:
1. Add 1 egg to 250 ml milk.
2. Add 1 tsp vanilla extract and stir.
3. Mix 150 g flour and 30 g sugar.
4. Add 5 g baking powder, 1/4 tsp salt and mix.
5. Pour in wet ingredients.
6. Add 30 g melted butter and mix to combine.
7. Set aside.
8. Pit 400 g cherries.
9. Cut them into quarters.
10. Add 1 tsp grated lemon zest.
11. Chop 50 g roasted pistachios.
12. Add small bunch of chopped mint.
13. Add 50 g dried cranberries, 30 g honey and mix.
14. Bake the wallfes.
15. Serve with cherry salsa and vanilla ice cream.
