How To make Pice Bach (Welsh Cakes)
1 lb Flour
1 ts Mixed spice
4 oz Lard
4 oz Currants
Milk 1 ts Baking powder
4 oz Margarine
6 oz Castor sugar
2 Egg
Sift the flour, baking powder, and mixed spice; rub in the margarine and lard; add the sugar, currants and beaten egg. Mix in milk to make a stiff dough and roll out 1/4" thick. Welsh Cakes on the Simmer Plate
To celebrate St David's Day, we asked Claire Thomson to show us how to make Welsh Cakes on the simmer plate of the Everhot! Our simmer plate was set to 200 degrees. You will need:
225g plain flour, plus extra for dusting
85g caster sugar, plus extra to dust
1 tsp ground mixed spice
1½ tsp baking powder
50g cold diced butter
50g cold diced lard
50g currants
1 egg, beaten with a splash of milk, about 1tbsp
Method:
1. In a mixing bowl rub the flour, sugar and spice together with the fats to form fine breadcrumbs.
2. Add the currants and mix to combine.
3. Add the beaten egg and milk to the bowl and swiftly combine to form a cohesive dough.
4. Dust the worktop with a little extra flour and roll the dough out approximately 1½ cm thick. Cut discs from the dough, I used a 5cm fluted cutter. Re roll any trim.
5. Use a piece of kitchen paper dabbed with a little neutral cooking oil and smear over the simmer plate carefully.
6. Add the Welsh cakes direct to the simmer plate and cook for around 3-4 minutes on each side, flipping carefully each time, until nicely coloured on both sides.
7. Remove from the heat and drench with a little extra caster sugar whilst still hot. Serve warm or cold.

This is my family's recipe, handed down to me and my brother... When making these, it transports me back to lovely childhood memories... I still remember my dad making them when I was a kid, the sweet familiar smell swirling round the kitchen always made me feel hungry, they didn't last long :) Give it a go, they are delicious
I'm inspired by many things, but this idea was spawned after watching another excellent video by the great Peter McKinnon it was the creative use of camera movemments and thinking ahead how each shot can line up. This fellow human's other videos have helped me learn the software I needed to create the graphics. It's amazing what you can learn in 2 months of lockdown.

Welsh cakes are also known as pice bach and are usually baked either on a griddle or bakestone. They are so delicious when they are fresh off the griddle and dusted with sugar. And even better when you cut them in half and spread homemade jam on them. You seriously need to try these.
