HOW TO MAKE A PINA COLADA - Then and Now

Apparently it took 3 months for Ramón “Monchito” Marrero to find the perfect plant. Luckily it wasn’t nuclear, but the flavors were! The pineapple is a really interesting fruit, it combines sweetness and acidity. It symbolizes friendship and hospitality, and we all know you can’t be a mixologist if you don’t have one inked on your forearm. The Pina Colada, symbol of the Caribbean summer, is just as refreshing as it is easy to make. The secret lies within, the right amounts and combination balance of rum, cream of coconut, and pineapple. 20 years after its creation it became the national drink of Puerto Rico. Pina Colada:
60ml or 2oz white rum
Handful of ripe pineapple chunks
60ml or 2oz sweet coconut milk
Crushed ice
Glassware: Hurricane Glass/Tiki Mug
Method: Blend
Garnish: Pineapple slice, pineapple leaves
Place all ingredients in the blender, flip the switch, dance to some Caribbean music, polish your best looking hurricane or Tiki Mug. Stop the blender...obviously and pour the sweet and tasty frozen mixture in the glass. Garnish with a slice of pineapple any way you prefer and some trimmed pineapple leaves. Place a biodegradable paper, hay or cornstarch straw (if you use colorful swirly plastic straw, turtles will be sad and we will ban you from the channel) and enjoy!

45ml or 1.5oz white rum
30ml or 1oz pineapple water*
30ml or 1oz coconut water
1 barspoon of coconut vinegar
4 drops of smoked pepper oil**
Glassware: DOF (double old fashioned)
Method: Throw
Garnish: Smoked pepper oil, kaffir lime leaf
Add all ingredients to the shaker, add cubed ice, place julep strainer or a Hawthorne with no prongs and transfer the liquid from one tin to another making long and thin strains for good aeration. Throw the cocktail 8-10 times for proper dilution and pour over a large clear cube. Garnish with 4 drops of pepper oil and place the kaffir lime leaf on top of the ice. Enjoy!
*Pineapple Water:
Easy to make Mexican pineapple drink, a type of agua fresca. It's fruit blended with water and a bit of sugar. We strained the final product through coffee filters to achieve clarity.
1 whole pineapple
1L filtered water
100g granulated sugar
**Smoked Pepper Oil:
We use store bought dried pepper flakes and whole chili. Toss them in a pan over high heat and let the flavors come out to play, once the pepper flakes and chili start to smoke and burn a bit, add neutral cooking oil. Let these cool cats get to know each other for a minute, then pour everything in a cup and let it cool down. Strain through a fine strainer and bottle.

The Brancolada recipe was created by New York bartender Jeremy Oertel. He is also known for numerous other modern classics such as the Artichoke Hold and the Bitter Mai Tai. Jeremy has worked at notable bars including Death & Co., Dram and Donna and now runs a consulting company You and Me Cocktails with his wife Natasha.
The drink is a delicious variation on the classic Pina Colada - calling for the addition of Branca Menta, adding intricate yet subtle bitter notes and a fresh mint flavour.

It’s time I shunned the #riff and brought you a classic Pina Colada. Since Dave and Buster's is the only place doing them right, I felt I would bring this Chuggernaut to the masses. It’s simple, delicious, and getting caught in the rain is overrated. So get a bunch of these in your hot bod, throw on some Beach Boys, and drift away.
Peeña Cola-duh:
-2oz. White Rum (or Dark Rum, whatever you want)
-1.5 oz. Pineapple Juice
-1 oz. Coco Lopez Coconut Cream
-.75 oz. Fresh Lime Juice
Put in shaker. Shake. Dump into glass or directly into mouth. Float a little grenadine on top if ya feeling frisky! Garnish if you’re a sweet fancy boy or girl!

1. Cocktailshaker zur Hälfte mit Crushed Ice füllen
2. 50 ml MAHIKI White Coconut in den Shaker gießen
3. 30 ml JOHN‘S Cocos hinzufügen
4. 20 ml JOHN‘S Lime Juice zugeben
5. Shaker mit 50 ml Pfanner Ananassaft auffüllen
6. SHAKE IT!
7. Cocktail Glas mit Crushed Eis befüllen und den Inhalt des Shakers über Kopf in das Glas abseihen
8. Mit frischer Ananas & Cocktailkirsche garnieren
