How To make Pina Colada Punch
5 Piece dried ginger root,
-bruised with spoon 5 tb Light-brown sugar
5 tb Cassia bark, broken in
-small pieces 3 1/3 c Water
10 China teabags
3 1/3 Shredded coconut
6 1/4 c Boiling water
8 3/4 c Pineapple juice
3 1/3 c Light rum or gin
Crushed ice Maraschino cherries Fresh pineapple chunks Fresh pineapple leaves (opt) Put ginger, sugar and cassia bark in a saucepan. Add 2/3 cup water and bring to a boil. Cover and simmer 5 minutes. Remove from heat and add teabags. Let stand 5 minutes, then strain into a bowl. In a blender or food processor, blend coconut and boiling water 1 minute. Let stand 5 minutes, then strain into tea mixture, pressing coconut to extract all moisture. Add pineapple juice and chill 1 hour. Add run or gin and stir well. Serve over crushed ice in tall glasses. Thread cocktail sticks with cherries and pineapple. Add a cocktail stick and swizzle stick to each glass. Garnish with pineapple leaves, if desired. VARIATION: Add more rum or gin for a stronger flavored drink.

This chilled cocktail with pineapple juice and rum is an interesting vegan tropical cocktail.
PINACOLADA
Ingredients
60ml white rum
45ml coconut cream
60ml pineapple juice
1 lemon
5-6 ice cubes + for serving
Pineapple slice with the skin for garnish
Pineapple leaves for garnish
Method
1. Cut the pineapple slice into triangles, make a diagonal slit on it. Snip some pineapple leaves and spray with some water to clean it.
2. Pour the rum in a cocktail shaker, add coconut cream, pineapple juice, cut the lemon in half and measure 15ml of the lemon juice and pour it into the shaker. Add some ice cubes and shake it well for a few seconds.
3. Fill a serving glass with some ice and strain the drink into it. Garnish with the pineapple triangle and pineapple leaves. Serve immediately.

How to Make a Piña Colada at Home
Piña Colada Ingredients
1/3 Cup of Coconut Rum (Malibu is my preference)
5 Cups of Ice
1 1/2 Cups Fresh Pineapple (it’s easiest to use precut pineapple)
1 of Pineapple Juice
1/3 Cup Coco Lopez cream of Coconut
Piña Colada Instructions
1. In your blender, combine all of the ingredients starting with the ice. Once all ingredients are in the blender, blend until there are no ice chunks left. Pour into a glass and garnish with a pineapple wedge.
When making a Piña Colada at home, it’s important to remember to make this recipe your own, you are the bartender, ya know? So if you want more Rum you add more, if you want a thicker consistency you add more ice and less pineapple juice.

The Pina Colada cocktail has to be the ultimate vacation cocktail, but what do you do when you’re craving a pina colada in the dead of winter? Make this delicious clarified pina colada riff. Coconut oil washed pineapple rum, clarified coconut milk and acid adjusted pineapple juice make a sensational sipper of a pina colada, perfect for the winter time, or any time of year!
First you'll need to acidulate the pineapple juice. We're doing this to obviously enhance the acidity of the juice but also to help it retain those bright and punchy flavors. When we clarify things they tend to lose their acrid qualities so since we want our pineapple juice to go into the clarification process with more zing than it would normally have. To do this we're going to juice our pineapple and save 1 cup of juice, to which we'll add 1.5g of citric acid and .5g of malic acid. Stir to combine and dissolve the crystals. Then we're going to add 1/2 cup of full fat coconut milk to the acidulated pineapple juice and stir to combine. Store this in the fridge overnight. The next day pour the combined juice/milk through a nut milk bag until it runs clear.
Next we'll make the coconut oil fat washed rum. For this we'll use 1 cup of Plantation pineapple rum mixed with 2 tablespoons of coconut oil. Put the coconut oil and rum mixture in the refrigerator for about 1/2 an hour. The oil will have solidified on top, and you can just easily remove it.
Now you can build this clarified pina colada! Add 2 oz clarified coconut and pineapple juice and 1 oz of the coconut oil fat washed rum. Add the ice and stir for 30 seconds. Pour the clarified pina colada into a rocks glass over a large ice cube and garnish with a brandied cherry- and there you have it- a clarified pina colada cocktail. Delicious anytime of year.

Para hacer esta bevida combine la lata de coco lopez en una jarra, mezclar, despues agrege hielo en un vaso 45ml. de ron y se llena con piña colada y a disfrutar. Salud!!

1 can pineapple juice
Your favorite rum. I recomend using this (Bacardi, Malibu, Aged Rum)
To make this cocktail combine the coco lopez and pineapple juice in a pitcher, mix well. Then add ice into a glass add 1.5 oz. Rum and fill it with pina colada and enjoy. Cheers!!
