Pineapple dream dessert is one of my family’s favorite one. Very easy to make and it’s perfect for any gatherings. You just need Cream cheese, melted butter, crushed pineapple, whipped cream and graham crackers. Must try!
Ingredients
Crust:
* 2 1/2 cups graham crumbs, 2 sleeves
* 1/2 cup unsalted butter, melted
Layers:
* 2 cups powdered sugar, adjust to your taste
* 8 oz cream cheese softened
* 8 oz Cool Whip or 1 cup heavy cream
* 20 oz crushed pineapple drained well
Instructions
* First crush the graham crackers in a food processor or you can use a rolling pin as well.
* Melt butter in the microwave or stove and allow to cool. Combine the crumbs and the melted butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×13 dish and let it chill in the refrigerator for 15 minutes.
* Beat the cream cheese first, and add the powdered sugar one cup at a time until incorporated. Increase the speed and beat well for a minute or so. Add half of the drained pineapple and stir in with a spatula. Spread the cream cheese and pineapple mixture over the crust.
* Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

Who doesn't love pineapple upside-down cake? Now imagine it taken to a whole new level as cheesecake! Try this electrifying Pineapple Upside-Down Cheesecake recipe for dessert. Your friends and family will be asking for the recipe after the first bite.

What you need:
2 Tbsp. brown sugar
5 Tbsp. butter, melted, divided
2 cans (8 oz. each) pineapple slice s in juice, well drained
7 maraschino cherries, well drained, stemmed
1 cup graham cracker crumbs
3/4 cup plus 3 Tbsp. granulated sugar, divided
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 tsp. vanilla
3 eggs
Let's make it:
1. Heat oven to 325ºF.
2. Mix brown sugar and 2 Tbsp. butter in 9-inch round pan until blended; spread to evenly cover bottom of pan. Top with pineapple slices, cutting if necessary to make even layer. Place cherries in centers of pineapple slices.
3. Combine graham crumbs, 3 Tbsp. granulated sugar and remaining butter; press gently into tops of pineapple slices.
4. Beat cream cheese and remaining granulated sugar with Mixer until blended. Add sour cream and vanilla; mix well. Add eggs, 1 at a time, beating on low speed after each just until blended; pour over pineapple.
5. Bake 55 min. to 1 hour or until center is almost set. Run knife around side of pan to loosen cake; cool completely. Invert cheesecake onto plate; carefully remove pan. Refrigerate cheesecake 3 hours.

ingredients for a 20cm (8inch) form:
for the crust:
200g ladyfingers
120g butter
for the pineapple cream filling:
5 sheets (=7,5g) gelatin
150ml pineapple juice
3 tbsp lemon juice
80g sugar
15g cornstarch

향긋한 파인애플을 넣어 상큼한 느낌의 파인애플 치즈케이크를 만들었어요~
파인애플 즙을 치즈케이크 반죽에 넣으면 젤라틴을 넣는다고 해도 잘 굳지 않아서 중간에 파인애플을 다져 넣었는데 먹을 때 파인애플 향이 많이 나고 식감도 좋아서 맛있더라구요~~
파인애플 느낌을 주기 위해 옆면에 무늬를 내봤는데 생각 보다 파인애플 느낌이 잘 나는 것 같아요~
저는 색감이 어울릴 것 같아서 초코 스펀지 시트를 사용했는데 노오븐 치즈케이크 만들때 많이 사용하는 비스킷류를 사용하셔도 좋답니다~
윗면에는 다이아몬드 모양으로 자른 파인애플과 애플민트를 올려 장식했는데 자연스럽게 무늬와 어울려 예쁘더라구요~~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
파인애플 200g
설탕 25g
소금 조금
옥수수전분 3g
꿀 10g
판젤라틴 6g
크림치즈 340g
슈가파우더 70g
플레인 요거트 90g
바닐라익스트랙 3g
50% 정도 휘핑한 생크림 140g
18cm 초코 스펀지 케이크 시트
▶레시피
1. 작게 자른 파인애플, 설탕, 소금, 옥수수전분을 냄비에 넣고 끓이다가 꿀을 넣고 졸인 뒤 식힌다.
2. 12cm 틀에 식힌 파인애플을 넣고 평평히한 뒤 냉동실에서 30분 정도 굳힌다.
3. 판젤라틴을 차가운물에 넣고 10분 정도 불린다.
4. 크림치즈를 부드럽게 풀고 슈가파우더를 넣고 섞은 뒤 플레인요거트, 바닐라익스트랙을 넣고 섞는다.
5. 불린 판젤라틴의 물기를 꼭 짜고 전자레인지에 10초 정도 돌려 완전히 녹인 뒤 반죽에 넣고 섞는다.
6. 50% 정도 묽게 휘핑한 생크림을 넣고 섞고 12cm 틀에 조금 붓고 평평히 한 뒤 냉동실에서 1시간 정도 굳힌다.
7. 남은 반죽의 조금을 다른 볼에 덜어두고 남은 반죽에 노랑 식용색소를 조금 넣고 섞는다.
8. 15cm 틀에 초코 스펀지 시트를 깔고 노란 치즈케이크 반죽을 조금 붓고 냉장실에서 30분 정도 굳힌다.
9. 굳은 치즈케이크 위에 노랑 치즈케이크 반죽을 조금 묻히고 12cm 틀에 굳힌 것을 꺼내 15cm 틀 가운데 올리고 남은 노랑 치즈케이크 반죽을 모두 붓고 냉장실에서 30분 정도 굳힌다.
10. 남겨둔 하얀 치즈케이크 반죽을 붓고 평평히 한 뒤 냉장실에서 2시간 정도 굳힌다.
11. 윗면에 파인애플과 애플민트를 올려 장식하고 옆면에 무늬를 내 마무리한다.
