How To make Pistachio & White Chocolate Cookies
1 1/4 c Firmly packed light brown
Sugar 3/4 c Butter flavored crisco
2 tb Milk
1 ts Vanilla
1 Egg
1 3/4 c Flour
1 ts Salt
3/4 ts Baking soda
1 c White chocolate chunks
1 c Pistachios, toasted, skinned
Chopped
Preheat oven to 375F. Place sheets of foil wrap on cooling surface. Beat brown sugar, crisco, milk and vanilla until well blended, then beat in egg. Combine flour, soda and salt then add to creamed mixture just until blended. Stir in white chocolate and nuts gently. Drop by teaspoonfuls 3" apart on ungreased cookie sheets. Bake, one sheet at a time, about 8-10 minutes for chewy or 11-13 minutes for crisp cookies. Cool on sheet 2 minutes, remove to foil. COOKIE DOUGH
100 ml whipping cream
250 gr white chocolate
175 gr Maria biscuits
75 gr pistachios
100 gr pistachio paste
TOPPING
250 gr white chocolate
100 gr pistachio paste
30 gr pistachios
GARNISH
pistachios
rose petals (edible)
Heat the whipping cream in a saucepan until it's almost boiling. Add the broken white chocolate and let it sit for 1 minute. Then, mix until smooth.
Put the Maria biscuits in a food processor and grind them into fine crumbs.
Use a food processor to coarsely grind the pistachios.
Take a deep bowl and add the finely ground Maria biscuit crumbs, chopped pistachios, pistachio paste, and white chocolate ganache. Mix everything into cookie dough.
Spread the cookie dough into a springform pan lined with parchment paper. Press it firmly. Place the cookie dough, covered, in the refrigerator until it's firm.
Cut the cookie dough into rectangles or desired shapes.
Melt the white chocolate using a double boiler. Add the pistachio paste and chopped pistachios. Mix until well combined.
Dip the pistachio cookies one by one into the chocolate-pistachio mixture.
Place the pistachio cookies on a sheet of parchment paper. Garnish the cookies with ground pistachios and rose petals.

I filmed this video on my iPhone. My husband usually films all of my videos, but I wanted to share this recipe with you. I took them to a Holiday neighborhood cookies exchange the day I made them and he was working and couldn’t film.
½ cup butter, softened
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cup all purpose flour
½ teaspoon baking soda
1 cup white chocolate chips
½ cup pistachio nuts, shelled
1 cup dried cranberries
Note: add ¼ teaspoon salt, if your nuts are not salted
Preheat oven to 375°. Grease a cookie sheet or line with parchment paper and set aside.
In a large mixing bowl, combine the butter and sugars. Using an electric mixer, cream the butter and sugars until fluffy for about 3-5 minutes.
Beat in the egg and vanilla extract.
In a separate bowl, combine the flour and baking soda. Using a wooden spoon, carefully stir the flour mixture into the butter mixture, just until combined. Stir in the white chocolate chips, dried cranberries and pistachio nuts.
Drop heaping spoonfuls onto the cookie sheet.
Bake the cookies for 8-10 minutes (it took mine about 11 minutes) or until they just begin to turn golden around the edges. Allow to cool for 2 minutes on the cookie sheet before transferring them to a wire rack to cool completely.
