How To make Plum Sauced Chicken
1 c Damson plum jelly
1/4 c Dark corn syrup
1 T Lemon juice
2 t Onion powder
2 ea Chickens,broiler-fryer,8ths
1/4 c Worcestershire sauce
2 T Corn oil
2 1/2 t Salt
1/2 t Ginger,ground
1. Combine all ingredients except chicken in a large bowl; mix until
blended. 2. Add chicken pieces, turning to coat.
3. Cover and refrigerate 1 hour.
4. Place chicken pieces on a rack in a foil-lined shallow roasting
pan. 5. Bake in preheated 350'F. oven 45 minutes, basting chicken with plum
jelly mixture occasionally; turn once. 6. Increase oven temperature to 450'F.; bake chicken, basting with
sauce twice, until well glazed, about 15 minutes. 7. Remove drippings from pan; skim off fat.
8. Serve drippings hot as a sauce with the chicken.
NOTE: Serve with hot cooked rice and cooked snow peas.

We just love Chinese stir frys and this Chinese chicken and shrimp stir fry with a BBQ plum sauce recipe is up there as one of our favorites. The Chinese plum sauce really adds a lot of flavor and punch to this stir fry. The chicken I velveted for a soft exterior and tender meat and the shrimp I simply cooked in a little butter and garlic. Chinese Chicken & Shrimp Stir Fry with Chinese BBQ Plum Sauce
INGREDIENTS:
1/2 pound cooked shrimp
1/2 pound sliced cooked chicken ~ I velveted my chicken
1 small diced onion
1 cup diced bell pepper
2 sliced carrots
1 small can rinsed and drained small corns
1 small can sliced water chestnuts
oil
butter
salt and black pepper
Chicken marinade:
1/2 pd. Boneless chicken breast sliced thinly
2 tbsp. soy sauce
2 tsp. rice wine
1 large egg white
1 1/2 tbsp. cornstarch
*Combine above ingredients and let set for 5-10 minutes.
Bring a pot of water near to a simmer. Drop in chicken pieces.
They will drop to the bottom. Once you add in all the pieces give
them a gentle push 2-3 times so they do not stick together.
Let cook (poach) for 2-3 minutes (depends on size of chicken pieces)
or until chicken is done.
Remove from the pan with slotted spoon and let drain in collander
until ready to add to stir fry.
SAUCE:
1/2 cup plum sauce
2 tbsp. light soy sauce
1 tbsp. hoison sauce
2 tbsp. ketchup
1 tbsp. brown sugar
1/8 tsp. five spice powder
*Mix above ingredients
In a wok or skillet on med high heat add oil, minced garlic and ginger.
Cook and stir for 15 seconds and then add onions, carrots, bell peppers, water chestnuts and baby corn.
Cook and stir for 4-5 minutes or until the vegetables start to become tender.
Add cooked chicken, shrimp and sauce to the vegetables.
Cook and stir for 1-2 minutes.
Serve with steamed jasmine rice.
Enjoy.

ROAST CHICKEN WITH PLUM SAUCE
8 pcs chicken drumsticks
Marinate:
1 tbs Oyster Sauce
1 tbs Light Soya Sauce
1/2 tsp Sesame Oil
Sauce:
2 tbs Oil
4 cloves Garlic
3 tbs Plum sauce
2 tbs Ketchup
2 tbs Oyster sauce
Black Fungus
Tomatoes
Water
Method:
1) Marinate chicken with oyster sauce, light soya sauce and sesame oil for at least an hour.
2) Roast chicken in preheated oven at 220C for an hour.
3) Meanwhile, fry chopped garlic until fragrant. Add black fungus and tomatoes.
4) Add plum sauce, ketchup, oyster sauce and water.
5) Bring to boil.
6) Simmer until sauce thickens.
7) Spoon sauce over roasted chicken and serve with steamed corn and broccoli.
Golden Chicken Thighs with Plum Sauce
This is a simple yet delicious dish that you can make quickly, after coming home from a hard day's work. It's sweet, sour and savoury. And it goes down very well with rice and kids… I mean kids love it as well.
Ingredients:
800g Chicken tight
1 Tbsp Oyster sauce
1 Tbsp Soy sauce
1 tsp sugar
1/2 tsp pepper
2 tsp corn starch
Sauce:
2 Tbsp Sugar
1/2 tsp Salt
3 Tbsp Plum sauce
1 Tbsp Lemon juice
75 ml Water
