How To make Poor Man's Perogies
1 pk Lasagna noodles
1 1/2 c Margarine or butter
4 ea Onions, diced
11 ea Medium potatoes
1 lb Velvetta
1 x Parmesan cheese, grated
Saute 1 1/2 sticks of margarine and the diced onions until tender. Cook lasagna noodles as directed on the package. Boil potatoes until tender as for mashed potatoes. Cube cheese. After potatoes are cooked, add cheese and remaining margarine (no milk!) and mash like making mashed potatoes. In a 9 x 13 pan, layer: 1/3 of onions on bottom, layer of noodles, 1/3 of potatoes. Repeat layers ending with mashed potatoes. Top with parmesan cheese and pepper. Bake at 350~F for 30 - 35 minutes. Cut into squares and serve. Making Pierogis From an Old Family Recipe
Hello everyone! Thanks for joining me for another episode!
Today, I work with my mom and sister to make a few dozen pierogis, from the same recipe that my Baba brought with her from the “old country”.
Please enjoy some time in the kitchen with my family, and let me know if you have ever made your own pierogis!
Dough recipe we use:
4c flour
4 eggs
Approx 1/2c oil
Approx 1/2c water
FULL tablespoon of salt
Mix together until smooth. Let rest a bit before rolling out.
Potato/cheese mixture
Peel and boil desired amount of potatoes
While still hot, mash and mix in shredded cheese. We use a mix of longhorn and sharp cheddar.
You would probably need about 4 lbs total potatoes and cheese for one batch of dough.
One batch of dough will make approx 3 dozen pierogis, depending how thin you roll them. If you use the kitchen aid pasta rollers, we roll it to number 3.

Pierogi Casserole -- PA Coal Region Comfort Food
Not everyone has the time to make pierogis! So whip up this easy pierogi casserole with your left over mashed potatoes and enjoy all the taste without the work and time of traditional pierogis! Don't worry, I have a vid coming on making the real deal pierogis soon! Recipe below!
Pierogi Casserole
6 C mashed potatoes
2 lg onions, diced and sauteed in butter
6-8 strips of bacon cooked, and cooled
4 C cheddar cheese or cheese of your choosing
1 8oz block of Philly Cream Cheese
2 tbs of parlsey
pepper to taste
6 lasagna noodles, cooked and drained
non stick cooking spray
Directions--
Combine mashed potatoes and cream cheese, mix well.
Put a layer of the potato mixture on the bottom of a greased 9x11 casserole dish.
Then add a portion of the onions.
Then add a portion of th bacon, crumbled.
Then add a portion of the shredded cheese.
Add pepper and parsley.
Place 3 lasagna noodles on this and repeat.
Bake at 375F for roughly a half hr, until cheese is melted and golden.
