How To make Poppy Seed Casserole
1 Pound turkey breast
ground
1/3 Cup onion :
chopped
1/2 Cup green bell pepper chopped
2 Cups tomato sauce
1/2 Teaspoon salt
1/4 Teaspoon pepper
1 Tablespoon italian seasoning
8 Ounces fettucine :
cooked
8 Ounces neufchatel cheese -- cubed
1 Cup nonfat cottage cheese
1/2 Cup nonfat sour cream
1 Tablespoon poppy seeds
In a large skillet, cook the turkey, onion and green pepper until the meat is no longer pink and the vegetables are tender. Stir in the tomato sauce, salt, pepper and italian seasoning.
Meanwhile, cook the pasta in boiling water without added salt or oil.
In a small mixing bowl, combine the neufchatel cheese, cottage cheese, sour cream and poppy seeds. Toss the cheese mixture with the cooked pasta.
Layer pasta mixture in the bottom of a 9x13x2 baking dish. Spoon the meat mixture down the center of pasta mixture. Bake, covered, for 30 minutes. Uncover the casserole and bake for an additional 10 minutes more or until the casserole is heated through.

-1 Tablespoon Poppy Seeds
Directions
Step 1
Preheat oven to 350 degrees Fahrenheit.
Step 2
Spread breadcrumbs evenly over a cooking sheet and place in the oven for 10 minutes, or until golden brown in color and slightly crispy.
Step 3
Place chicken in 9×13 casserole dish.
Step 4
Stir together chicken soup, sour cream. Pour over chicken and mix lightly until integrated.
Step 5
In a separate bowl, stir together breadcrumbs and melted butter. Sprinkle over chicken mixture. Then, sprinkle poppy seeds on top.
Step 6
Bake casserole for 20-30 minutes until top of casserole is browned and sauce is bubbly. Serve warm.

This easy, delicious Poppy Seed Chicken Casserole is a comfort food classic with tender chunks of chicken in a creamy sauce with a crunchy, buttery cracker topping. It's a family favorite in my house and it always devoured in minutes. This is definitely a winner - winner chicken dinner and a must try!
Poppy Seed Chicken Casserole
Ingredients
2 pound bag of frozen chicken (about 5 cups cooked chicken, cut into bite-size pieces)
2 cans cream of chicken soup
2 cups sour cream
3/4 cup grated Parmesan cheese
1 tbsp poppy seed
2 cups crushed butter crackers (Ritz)
1 stick butter
Instructions
Preheat oven to 350 degrees
In a large bowl, stir together the soup, sour cream, and Parmesan cheese. Add the cooked chicken that has been cut into bite-size pieces (I shred the cooked chicken with my fingers)
Mix everything together and pour into a 9 x 13 baking dish.
Melt butter in a medium size bowl then add crushed crackers and poppy seeds. Stir until crackers are coated with butter. Sprinkle over the chicken in an even layer.
Bake, uncovered for 30 minutes until hot and bubbling and crackers are golden brown.
Serve by itself or over rice.
