The Secret to the Best Instant Pot Pork and Sauerkraut
If you think you don't like sauerkraut---this recipe may change your mind! With one secret ingredient, this dish is perfectly balanced! The pork is cooked to perfection and is tender and juicy! This easy instant pot meal is a traditional recipe for New Years Day, but is perfect all year long!

2-3 pound pork loin
salt and pepper
16 ounces sauerkraut, drained of extra liquid
1 cup apple juice for 6 qt and 1.5 cups for 8 qt.
1 apple sliced
1 onion sliced
2 cloves crushed garlic
INSTRUCTIONS
Cut the pork loin into 2 inch large chunks.
Liberally season pork loin with salt and pepper on all sides.
Place pork in pressure cooker. Top with apples, apples, onions, and garlic. Add in apple juice to pressure cooker. Top with sauerkraut.
Cook on high pressure for 15 minutes.
Once cook time has elapsed allow pressure to release naturally, or for at least 15 minutes.
Simple & Easy SLOW COOKER/CROCK POT Recipe: Pork Chops & Sauerkraut
Here's another easy and delicious recipe perfect for your slow cooker. AND the best thing is you can make this with a few simple ingredients that you most likely have in your kitchen.
Ingredients:
Thin sliced pork chops
1 Onion, sliced
1/8-1/4 cup Paprika (add up to 1/4 cup if you are making a big amount or if you like the taste...which I do but my family does not so compromise is what works here!)
Sauerkraut....as much or as little as you desire...Personally I like a lot but it's all up to you! Just eyeball it!
Cook in your crock pot for 4 or more hours. Pairs great with rice

INGREDIENTS:
2 tbsp. vegetable oil
4 center-cut boneless pork chops (about 5 oz. each)
1 cup chopped onion (about 1 large)
1 can (16 oz.) sauerkraut, drained
1 cup chopped peeled apple (about 1 medium)
1/ cup chicken broth
2 tbsp. fi rmly packed light brown sugar
1/2 tsp. black pepper
EASY STEP-BY-STEP INSTRUCTIONS:
1. Heat the oil in a large skillet over medium-high heat until hot. Add the pork chops. Cook until browned on both sides, 6–8 minutes. Transfer the pork to a plate. Set aside.
2. Add the onion to the skillet. Cook until tender, 1–2 minutes. Add the sauerkraut, apple, broth, brown sugar and pepper. Mix well.
3. Add the browned pork chops to the skillet. Bring to a boil. Reduce heat to low. Cover and simmer until the pork is tender when pierced with a fork, 45–60 minutes. Serve.

New Year's Day Pork and Sauerkraut Recipe
If you grew up in Western Pennsylvania, you're probably familiar with the New Year's Day tradition of eating pork and sauerkraut for good luck. In today's flavor expedition, we're going to explore our brown sugar coffee rub, Hazy Midnight.
New Year's Day Pork and Sauerkraut
1 Tablespoon avocado oil or olive oil
4 5 ounce pork chops, trim fat from chop about 1 ½ inch thick
1 yellow onion, peeled and sliced thin
1 apple, cored, peeled, and chopped (Granny Smith recommended)
1 cup apple cider
2 pounds sauerkraut, in a bag and drained
Hazy Midnight for seasoning
Preheat oven to 350 degrees.
Season both sides of pork chops with Hazy Midnight.
In an oven-safe skillet, over medium heat, add the oil. Brown the pork chops on both sides, about 4 minutes per side. Set aside.
To the skillet, add and combine onion, chopped apple, brown sugar, apple juice, and drained sauerkraut. Cook a few minutes until soft.
Add the browned pork chops and combine so that the pork chops are covered with the sauerkraut and juices.
Cover the skillet with lid or foil and bake at least 45-60 minutes. Pork chops should be tender and no longer pink - make sure temperature reaches 145 degrees. Serve immediately or cool and refrigerate and reheat when ready to eat.

Cast Iron Cooking: Pork Chops with Apples and Sauerkraut
Ingredients:
4 thick pork chops
Salt, pepper, garlic powder to taste
1 TBSP. vegetable oil
3 large apples, peeled and cut into wedges
1 15-oz. can of sauerkraut, drained
2 TBSP. white wine (optional)
1/2 cup light brown sugar
Method:
Preheat the oven to 300F. In a cast iron skillet over medium high heat, add the vegetable oil and sear your seasoned pork chops for 3 minutes on each side. Set them aside and turn off the burner.
Mix together the sauerkraut, wine, and brown sugar in a large bowl. Add the apple wedges to the skillet, then place the pork chops on top of them. Cover everything with the sauerkraut mixture, top with some freshly ground black pepper and bake for 45 minutes.
Plate the pork chops and then mix the sauerkraut and apples well to make sure you get all of the brown sugar and juices from the bottom of the skillet. Serve with mustard and boiled potatoes or nice crusty bread and butter.
