Pork vindaloo is a spicy and tangy dish from Goa, India, made with marinated pork cooked in a flavorful sauce of vinegar, chilli and spices.The blend of spices like cumin, mustard ,cloves, and cinnamon gives it a distinctive taste. It's known for its fiery kick and rich flavors! Best served with sannas / bread/ rice

Ingredients;
Pork 500g (with fat)
For grinding:
Kashmiri chilli 10
Coconut vinegar 5 tbsp(including for soaking)
Mustard seeds 1/2 tsp
Cumin seeds 1/2 tsp
Peppercorns 1/2 tsp
Cloves 3
Cinnamon 1 /2'' piece
Garlic 8
Ginger 1/2'' piece
Oil 1 tbsp
Onion 1 big chopped
Sugar/jaggery 1 tsp
Water as required
Salt 1 1/4 tsp

Ingredients:
-pork, 2 kilos
-onions, 4
-Goan coconut vinegar, a cup
-garlic, two whole pods, cleaned
-ginger, five inches, scraped
-Bedgi/Kashmiri dry red chillies, 30
-cinnamon, 3 sticks
-cloves, 15
-peppercorns, 1 teaspoon
-mustard seeds, 3 teaspoons
-cumin powder, 2 teaspoons
-turmeric, 1½ teaspoons
-sugar, 1½ teaspoons
-salt, 2½ teaspoons
Method:
-Wash 2 kilos of good quality farmed pork in vinegar water (1 part vinegar to 3 parts water). Pat dry
-Slice 4 onions
-Deseed and devein half the dried chillies
-Toast the chillies and mustard seeds for a minute on low flame.
-Grind the garlic, ginger, mustard seeds, chillies, cumin powder, turmeric, sugar and salt in about ½ a cup of vinegar, adding more, a tablespoon at a time, if required to get a smooth red paste. This is the vindaloo masala.
-Marinate the pork in vindaloo masala, refrigerated, for 48 hours/24 hours/overnight
-On cooking day, place the pork in a heavy vessel and cook, covered, on a low flame for 30 minutes
-After 30 minutes, stir the pork, adding in a tablespoon of vinegar
-Cover and cook for another 30 minutes
-After 30 minutes, stir the pork again, adding another tablespoon of vinegar.
-Toss in the cinnamon, cloves and peppercorns
-Check the doneness of the meat to see how much more cooking time is needed
-Cover and cook till the pork is fork tender (approximately 1¼ hours, start to finish)
-Enjoy your Goan pork vindaloo, with love from our home to yours.

Goan Pork Vindaloo
1 kg pork with fat (cut into 2” - 3” pieces)
Ingredients required for vindaloo masala
14 Kashmiri chilies (deseed)
5 baydgi chillies (deseed)
1 whole garlic pod
1” ginger piece
1 tps cumin seeds
1” cinnamon stick
20 peppercorns
10 cloves
1 tsp mustard seeds
1/2 tsp turmeric powder
1/2 tbsp Goa jaggery
Salt as required
Grind only with vinegar (for best result use Goa Toddy Vinegar)
Other ingredients required
3 medium onions (chopped
1/2 cup water
Salt to taste

Pork Vindaloo | Mallika Basu
Vindaloo might be a dish that you associate with your local curry house, but Mallika Basu is here to show you how to make an authentic version at home. Mallika's recipe combines kashmiri chillies with coconut vinegar, ginger and garlic to make a gorgeous paste to marinade the pork shoulder. Caramelised onions and a whole range of spices add depth to the dish and give it it's rich colour. The pork is left to cook on a low heat until tender and melts in your mouth. Remember, a vindaloo doesn't have to make your eyes water, you just have to ensure you have a good level of heat and adjust the amount of chillies to suit your own preference.
