How To make Potato& Egg Casserole
4 Potatoes,medium-size
1 t Salt
1/4 ts Pepper
1/4 ts Nutmeg
3 tb Bacon fat
1/2 c American cheese,grated
4 Eggs
3/4 c Milk,evaporated,undiluted
1. Peel potatoes; slice thinly.
2. Sprinkle potatoes with salt, pepper and nutmeg.
3. Heat bacon fat in a skillet; add potatoes and cook
until browned and tender, stirring frequently. 4. Spread potatoes evenly in a greased 1-quart
casserole; sprinkle with cheese. 5. Break eggs carefully over cheese; cover with cream.
6. Bake in preheated 350'F. oven 15 to 20 minutes, or
until eggs are set. 7. Serve at once.

Potato and Egg Breakfast Casserole
Ingredients:
6 large eggs
1 tablespoon avocado oil
1 small onion, finely chopped
1 green bell pepper, diced
1 medium russet potatoes, diced into small 1/2 inch cubes
Salt and pepper to taste
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Lightly grease a 9x9 casserole dish and set aside.
Heat avocado oil in a skillet. Add onions and cook for about 1 minute. Then add bell pepper and potatoes. Cook for another 4 minutes.
In a small bowl, beat eggs together with salt and pepper and pour into the casserole dish.
Top with onions, peppers and potatoes.
Bake for 35-45 minutes.
Enjoy on a higher carb day!
**This will make a big batch and therefore it is great for meal prep! Be sure to store it in an airtight container in the refrigerator.

It includes whole ingredients only and can be enhanced further with meats and other ingredients to turn it into a main course weekday meal. You can even serve it up as breakfast if that's your kind of breakfast dish. The options are countless, making this quite a useful recipe to have. Everything you love about breakfast in one easy and delicious casserole. Perfect for Thanksgiving and Christmas morning or whenever you have company over. Pop it in the oven when you get up and you are good to go.

1 lb bulk sage pork sausage
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
10 eggs
2 cups whole milk
¼ tsp ground black pepper
½ tsp garlic powder
½ tsp salt
3 cups frozen country style hash browns
1 cup French’s crispy fried onions
8 oz cheddar cheese
hot sauce, optional
Bake at 350 F or 177 C uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.
