How To make Potato & Egg Casserole
4 Potatoes,medium-size
1 ts Salt
1/4 ts Pepper
1/4 ts Nutmeg
3 tb Bacon fat
1/2 c American cheese,grated
4 Eggs
3/4 c Milk,evaporated,undiluted
1. Peel potatoes; slice thinly.
2. Sprinkle potatoes with salt, pepper and nutmeg.
3. Heat bacon fat in a skillet; add potatoes and cook until browned and
tender, stirring frequently. 4. Spread potatoes evenly in a greased 1-quart casserole; sprinkle with
cheese. 5. Break eggs carefully over cheese; cover with cream.
6. Bake in preheated 350'F. oven 15 to 20 minutes, or until eggs are set.
7. Serve at once.

1 lb bulk sage pork sausage
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
10 eggs
2 cups whole milk
¼ tsp ground black pepper
½ tsp garlic powder
½ tsp salt
3 cups frozen country style hash browns
1 cup French’s crispy fried onions
8 oz cheddar cheese
hot sauce, optional
Bake at 350 F or 177 C uncovered for 40 minutes. Then cover with foil and bake 10 more minutes.
*Be sure to let the casserole sit out at least 20-30 minutes before baking because the sudden changes in temperature may cause the dish to shatter or break.

Potato and Egg Breakfast Casserole
Ingredients:
6 large eggs
1 tablespoon avocado oil
1 small onion, finely chopped
1 green bell pepper, diced
1 medium russet potatoes, diced into small 1/2 inch cubes
Salt and pepper to taste
Instructions:
Preheat oven to 350 degrees Fahrenheit.
Lightly grease a 9x9 casserole dish and set aside.
Heat avocado oil in a skillet. Add onions and cook for about 1 minute. Then add bell pepper and potatoes. Cook for another 4 minutes.
In a small bowl, beat eggs together with salt and pepper and pour into the casserole dish.
Top with onions, peppers and potatoes.
Bake for 35-45 minutes.
Enjoy on a higher carb day!
**This will make a big batch and therefore it is great for meal prep! Be sure to store it in an airtight container in the refrigerator.

Ingredients (4 servings)
- 800g uncooked potatoes (200g per serve)
- 1 tbsp Oregano
- 1 tbsp Garlic Powder
- 1 tsp Salt & Pepper
- 3-4 tsp olive oil or cooking spray
- 1-2 tsp Paprika
- 1 medium Red Onion
- 1/2 Red Bell Pepper
- 160g Turkey Bacon (Brand: @saffron_alley - great quality meats)
- 4 whole Large Eggs & 8 Egg Whites (you can choose how many whole eggs you want to use)
- 100g Light Cream Cheese
- Garnish Parsley, Chilli Flakes
- 40g Spicy Mayo | 10g per serve

Important cooking notes:
- Microwave the potatoes for 4-5 mins in batches, lay them all flat on a plate to soften quicker. This methods makes the cooking process faster
- When cooking the potatoes, make sure you let them crisp up for 4-5 mins on mdeium high heat before adding the rest of the ingredients. You can add more cooking spray or olive oil
- Cook the eggs on medium low heat to get them nice and fluffy, add the cream cheese and mix till it melts and fully combined
