How To make Potato Ham Scallop Casserole
2 c Cubed, fully cooked ham
8 md Potatoes, peeled & thinly
-sliced (6-cups) 1/4 c Finely chopped onion
1/2 c All-purpose flour
2 c Milk
3 tb Fine dry bread crumbs
1 tb Butter or margarine, melted
2 tb Finely snipped parsley
Place half the ham in a 2-qt casserole. Cover with half the potatoes and half the onion. Sift half the flour over; season with salt and pepper. Repeat layering ham, potatoes and onion. Season with additional salt and pepper. Sift remaining flour atop. Pour milk over all. Bake covered at 350 till potatoes are nearly tender, 1 to 1 1/4 hours. Uncover. Combine bread crumbs and melted butter; sprinkle atop casserole. Top with parsley. Bake 15 minutes longer.

SCALLOPED POTATOES WITH HAM
4 Tbsp. (½ stick) butter, plus extra for greasing
½ onion, diced
1 heaping tsp. minced garlic
½ cup all-purpose flour
2 cups whole milk
1 cup heavy cream
1 tsp. black pepper
1 tsp. seasoned salt
2 lbs. russet or Yukon gold potatoes, scrubbed clean
2 cups diced ham
2 cups grated cheese of your choice
Chopped parsley (optional)
1. Preheat oven to 375°F.
2. Add the butter and onion to a large skillet over medium high heat and sauté until it is starting to soften. 3-4 minutes. Add in the garlic and stir a few seconds longer.
3. Sprinkle the flour over the onions and garlic and whisk together. Cook until golden brown.
4. Stir in the milk and cream and whisk the mixture around, allowing it to thicken. Stir constantly.
5. Add the pepper and seasoned salt. Reduce the heat and keep it warm.
6. Slice the potatoes as thin as you can. Using a mandolin is the easiest way.
7. Generously butter a 2-quart baking dish. Add half of the sliced potatoes. Then add half of the ham.
8. Sprinkle on half the cheese and then pour on half the sauce from the skillet.
9. Repeat with the rest of the ingredients. You can sprinkle extra pepper on top.
10. Cover the dish with foil and bake it for 35-40 minutes. Remove the foil and it for an additional 15-20 minutes, until the cheese is golden brown and the sauce is bubbling.
11. Sprinkle with chopped parsley and serve it up! Enjoy!

Creamy and delicious Scalloped potatoes recipe. I have to covered it the first 40 minutes because I have tried cooking scalloped potatoes several times and the potatoes were not all the way done. In this recipe I tried covered it for 40 minutes. Uncovered and put cheese on the top and continue cooked for 25 minutes uncovered. It turned out great!!! Tender potaoes and not burnt cheese.
