How To make Potato and Onion Tart
92 1/2 g Butter
1/2 tb Iced water
1/2 tb Lemon juice
1 c Wholemeal plain flour
1/2 tb Olive oil
2 l Brown onions
1 l Tomatoes
1/2 ts Brown sugar
1/2 ts Malt vinegar
1/2 tb Olive oil (extra)
3 ts Paprika
: peel and thinly slice the potatoes Time: 30 minutes preparation, 1 hour chilling, 25 minutes cooking time. Place the butter, iced water and lemon juice into a large bowl. Add 1/4 of the flour and mix to form a paste using a fork. Add the remaining flour and mix to form a smooth dough. Wrap in plastic wrap and put in the fridge for one hour. To prepare the filling heat the oil in a large pan. Add the onions and cook, stirring over a low heat until they are a golden brown. Add the tomatoes, sugar and vinegar. Stir to combine. Simmer, uncovered, until thickened. Heat the extra oil in a large, shallow pan. Add the potatoes in a single layer. Cook, turning once, until the potatoes are golden brown. Roll out the pastry between two sheets of greaseproof paper to fit a 23cm fluted flan tin. Line the tin with the pastry and bake for 25-30
minutes or until crisp and golden brown. Spread the onion filling over the base of the cooked pastry. Arrange the potatoes on top of the onion. Spread over the sour cream and sprinkle with paprika. Bake in a hot over (200C) for 8 minutes or until the top is golden brown. Serve hot or at room temperature.

I hope I find you all well. Today I made this absolutely delicious potato bake! This works really well as a side but would be just as tasty on it’s own as a lunch, or even as a main meal :) You could add all sorts of things to this to make it your own…sweetcorn, mushrooms, peas, leeks, herbs :) shredded chicken would also be great in this and change up the cheese to suit yourself.

What I used - Serves 5-6 as a side
* 700g (25 oz) Potatoes - I used Maris Piper
* A little olive oil for frying
* 1 Large onion - Thinly sliced
* 1 Teaspoon minced garlic or two cloves finely sliced
* 400g (14 oz) Cooked ham or bacon - cubed or cut into chinks
* 400g (14 oz) Chicken soup - I used Heinz
* 200g (7 oz) Condensed chicken soup - I used Campbells
* 300g (10.5 oz) Grated cheese - I used Gruyere, but cheddar works well too

How to make a chip shop style Cheese and Onion Pie | A British Classic!
I'm going to show you how to make Individual chip shop-style cheese and onion pies that are lovely and cheesy and melty in the middle. Perfect for a meat-free dinner.

Oven Temp: 200c/400f
Ingredients:
• 2 x 320g packs ready-rolled shortcrust pastry
• 1 medium potato, peeled and cut into 1cm cubes
• 2 tbsp unsalted butter
• 1 large onion, peeled and finely sliced
• 2 tbsp plain flour
• 125ml whole milk
• 50ml double cream
• 150g mature cheddar cheese, grated
• ¼ tsp mustard powder
• ¼ tsp salt
• ½ tsp freshly ground black pepper
• 1 egg, lightly whisked
Instructions:
1. Preheat the oven to 200C/400F
2. Unroll one of the rolls of pastry and slice into four squares.
3. Line 4 individual pie dishes (measuring approx. 11cm diameter x 3.5cm deep) with the pastry squares, so the pastry covers the base and sides and overhangs slightly.
4. Use a fork to prick several holes in the base section of the pastry.
5. Cover each pie case with baking parchment and fill with baking beans, then place on a tray and bake in the oven for 10 minutes to par-cook the base of the pies.
6. Remove the pie bases from the oven, leave to cool for 10 minutes, then carefully remove the parchment and baking beans.
7. While the pastry bases are cooking, make the filling.
8. Add the diced potato to a pan and cover with water. Bring to the boil and simmer for 12 minutes – until the potato is very tender and starting to break apart. Drain and put to one side.
9. Melt the butter in a second pan and add the sliced onion. Stir and cook over a medium heat for 5 minutes until the onion starts to soften.
10. Sprinkle on the flour and stir to coat the onions. Cook for a further minute.
11. Add the milk a splash at a time, whilst stirring, until the milk is fully incorporated.
12. Add in the cream, cheese, mustard powder, salt, pepper and cooked potatoes.
13. Stir together until the cheese has melted and the potatoes break down. The filling should be thick and only just pourable.
14. Divide the filling between the four pie cases. Brush a little of the egg wash onto the edges of the pastry.
15. Unroll the second roll of pastry. Slice into four squares and place a square on top of each pie dish.
16. Cut off any excess pastry, then crimp the edges of the pastry together using a fork.
17. Brush the tops of the pies with egg wash and pierce two holes in the top of each pie using a sharp knife.
18. Place the pies on a baking tray and bake in the oven for 20-25 minutes until golden brown.

Leeks and Onion Quiche ( great starter recipe for vegetarians)
Join my online French cooking classes ????????: in this video we look at how to make a French quiche from scratch, step by step. today we are making a leek and onion quiche as well as a mini quiche lorraine. its easy versatile and delicious.
Ingredients:
250 grams of homemade shortcrust pastry see video below
For the filling:
2 whole eggs
2 egg yolks
250 ml of full cream milk (whole milk)
250ml of pure cream at least 45 % fat content (heavy cream)
seasoning: a pinch of salt,cayenne pepper and nutmeg.
the filling is the same for any type of quiche, only the garnish changes so feel free to experiment. ( be careful not to use ingredients containing too much water)
For the garnish:
Leek and onion quiche
1 leek
2 brown onions (sweet onions)
2 teaspoon of unsalted butter to cook the onions and leek.
Quiche Lorraine:
250 grams of pan fried smoked pork belly or pancetta finely sliced
200 of gruyere cheese or swiss cheese or cheddar (last resort)
a bit of oil to fry the bacon
CARAMELISED BALSAMIC ONION & GOATS CHEESE PUFF PASTRY TART RECIPE
Ingredients
- 1 x ready to roll puff pastry
- goats cheese
- 2 x red onion
- 15g butter
- 1 x tsp sugar
- 1 x tsp balsamic vinegar
- drizzle olive oil
- 1 x egg
Method
1. Peel and finely slice 2 x red onion
2. Add sliced onion into pot with butter and some oil
3. Add 1 x tsp sugar and 1 x tsp balsamic vinegar
4. Cook on medium heat until they are caramalised - mine took approx 35 mins
5. Pre heat oven to 190 degrees
6. Cut goats cheese log into slices in preparation for assembly
7. Unroll pastry and cut into tart shapes (I chose rectangle)
8. Score the same shape approx 1cm within the pastry to create a border
9. Within the inner shape, spread on some caramelised onion, top with goats cheese and thyme leaves
10. Brush round the border with whisked egg wash
11. Bake in oven at 190 degrees for approx 20 minutes - until golden ????
