How To make Puff Oven Pancakes
PANCAKES:
4 tb Butter
4 Eggs
2/3 c Milk
2/3 c Pancake mix
FIESTA FRUIT TOPPING:
10 oz Raspberries
1 c Pineapple chunks
1 Bananas
1/4 c Sour cream
1/4 c Sugar, brown
Preheat oven to 450. Melt 2 tb butter in each of two 9" pie plates in oven. In blender, combine eggs, milk, and pancake mix. Pour batter into pie plates. Bake about 18 minutes, until pancakes are puffy and browned. Do not open oven while pancakes are cooking. Spoon raspberries on top of each warm Puff Oven Pancake. Top with drained pineapple chunks and sliced banana. Sprinkle brown sugar over top. Top with sour cream. Or sprinkle 1-1/2 ts lemon juice over top of each warm Puff Oven Pancake. Sprinkle powdered sugar over top. Serve immediately. One of Alex Daynes families’ favorite recipes to make are German Puff Pancakes. They are easy to make, delicious, and everyone loves them! Alex loves that they become an easy crowd-pleasing breakfast. Rather than spending the morning flipping pancakes or changing out the waffle iron, you can bake a whole pancake in a pan in the oven. The sides get fluffy and golden brown, and the texture is amazing.

Similar to a Dutch Baby pancake (or a sheet pan pancake), this pancake is fluffy (when freshly cooked) and tastes somewhat like an egg tart. It works well on it's own but is extra special with lemon juice and a bit more sweetener sprinkled on the top!

INGREDIENTS:
- 3 Large Eggs
- 1/2 cup (125ml) Sour Cream OR Greek Yogurt
- 4 tbsp Sweetener (I used Erythritol)
- 1 tsp Baking Powder
- 1 tbsp Almond Flour
- 2 tbsp Lupin Flour (I used Miracle Flour -
- 2 tbsp Butter
OPTIONAL: 1/2 tsp Vanilla Extract (or a flavoring of your choice!)
METHOD:
1. Preheat oven to 200c/400f. Prepare a medium baking dish by adding the butter to it and placing it in the oven until the butter has melted.
2. In a medium bowl, add ALL other ingredients and whisk until you have a smooth pancake batter.
3. Pour into the baking dish with melted butter. Place in the oven for 12-18 minutes, or until the top and edges are browning and the middle has set.
4. Remove from the oven, cut into 4 and enjoy with any keto toppings of your choice!

A Dutch baby is simple to make but is truly special. Dutch baby pancakes taste like Crepes but in pancake form. The batter puffs up the beautifully golden crispy crust and the custard-like center is memorable.

►3 large eggs, room temperature (put in warm water 2 minutes)
►1/2 cup all-purpose flour
►1/2 cup whole milk, room temperature (microwaved 15 seconds)

Dutch baby — sweet and savory popover pancakes

***RECIPE***
eggs (one per person, I do 2-3 in a 10 in / 25 cm pan)
milk (1/3 cup, 80mL per egg)
flour (1/3 cup, 40g per egg, and I like to replace up to half my flour with starch)
salt (a pinch per egg)
sugar (1 teaspoon per egg, sweet or savory)
vanilla (only for sweet)
spreadable cheese, like ricotta/brie/mascarpone (OPTIONAL 1 tablespoon per egg, improves the taste but makes it not puff as much)
butter
toppings (lemon juice and powdered sugar is nice for sweet, eggs/salami/onion is nice for savory)
If possible, warm the eggs and the milk before mixing. Combine the eggs, salt, sugar and vanilla (if using) in a mixing bowl and whisk until frothy. Whisk in the flour until smooth, then whisk in the milk. Or you could just dump all of that in the blender at once. Let the batter sit for at least 20 minutes before baking.
Put your pan (nonstick or cast iron) in the oven and get the oven heating to 425ºF/220ºC. When it's all the way hot, take the pan out of the oven and melt in a thick film of butter. Pour in the batter and return the pan to the oven. Bake until puffy and golden (mine took 20 minutes).
If you want to cook some eggs on top like I do in the video, bake until almost done, pull it out, put on your eggs/seasonings/onions/salami/whatever and return to the pan for a few minutes until the yolk is as firm as you want it.
Transfer to a cooling rack and let it steam out before you eat.
