8 Chiles Poblanos
2 md Onions sliced
1 c Cream
Salt 2 Or three leaves of epazote*
(optional) Black pepper. Vegetable oil Peel the poblanos and cut in slices like one finger. Fry in vegetable oil, add onions, salt and black pepper. When the onion is transparent add the cream. INGREDIENTS
3 to 4 (454 g) poblano peppers
3/4 cup (130 g) fresh corn kernels
1 small onion
1 clove of garlic
2 Tbsp (28 g) unsalted butter
1 tsp chicken bouillon powder
8 oz (227 g) sour cream
4 fl oz (118 ml) heavy cream
4 oz (227 g) Oaxaca cheese
salt and pepper to taste

Roasted Poblano Strips in Cream Sauce (Rajas con Crema)#shorts
Roasted Poblano Strips in Cream Sauce - aka Rajas Poblanas or Rajas con Crema, is a traditional Mexican recipe made by roasting poblano peppers, slicing them into “rajas”, or strips, then simmering them with a creamy cheese sauce. They are hugely flavorful and sure to be your new favorite. Here is how I make them.

Rajas Poblanas (Roasted Poblano Strips in Cream Sauce) – Recipe
Ingredients
4 large poblano peppers
2 tablespoons butter
½ yellow onion sliced
½ cup Mexican crema or use sour cream
5 ounces melty Mexican style cheese shredded (about 2 cups – I used Mexican manchego)
1 teaspoon chili powder I used paprika, though ancho powder would be great here
½ teaspoon Mexican oregano
Salt and pepper to taste I used a few light grinds
Instructions
Roast the poblano peppers over your stove top flame until, rotating often, until the skins char and blister up, about 10 minutes. Alternatively, you can bake them in the oven until the skins blacken and blister, about 15 minutes. See the information above on how to roast poblano peppers. Cool and set the peppers into a plastic bag to steam. This will help loosen the skins. Most times I can just peel the skin right off without steaming.
Peel the charred skin from the roasted poblano peppers and slice them into strips about ¾ inch thick.
Heat a large pan to medium heat and melt the butter.
Add the onion and cook about 5 minutes, until the onion strips are translucent and soften up.
Add the poblano pepper strips and cook another minute, stirring.
Swirl in the crema and stir to incorporate.
Stir in the melty cheese a bit at a time, constantly stirring, until it melts through.
Add the seasonings and stir. Reduce the heat and let the mixture warm for about a minute or so, stirring here and there.
Serve!

I’m drooling just thinking about that sauce. Ooey gooey cheesy goodness oooooozing out of a tortilla. YEAH, THAT!!
It’s not spicy and very similar to queso fundido. This recipe consists of roasted peppers in a creamy sauce that is to die for.
Serve with warm tortillas or as a tasty side dish.

Rajas con crema is a delicious Mexican recipe consisting of roasted poblano strips in a delicious cream sauce. It can be served with something simple such as rice or black beans but you cannot forget the warm corn tortillas.

2 tbs salted butter
1 tsp chicken bouillon

ingredients:

1/2 cup of cream cheese
1/2 cup of mayo
1/2 cup of milk
1 cup of sour cream
1/2 tsp of black pepper
1 tsp of garlic salt
1 tsp of knorr (chicken broth powder)
1/2 tsp more of knorr to add to the peppers
