If you are a cheese lover, this is the pasta that it will be hard to resist.
Ravioli are small & square of pasta enveloped stuffed with a filling. They originated as a traditional food in Italian cuisine.
Gorgonzola Mascarpone is delicious cheese, in combination with low fat milk make this sauce light & rich taste.
In this recipe, I used ravioli filled with cheese & tomato, with a combination of Gorgonzola Mascarpone cheese, garlic cream cheese, low fat milk, smoked beef and fresh garlic, make this sauce rich, light, tasty & delicious.
And a lot of vegetables on it, such as broccoli, champignon, green olives, make this pasta is delectable.
This easy ravioli pasta will be ready in under 30 minutes, and it is a quick & delicious dish for two persons.

Ingredients:
Gorgonzola Mascarpone Sauce
• 5 cloves pressed garlic
• 125 grams Gorgonzola Mascarpone Cheese
• 1 full tablespoons of garlic cream cheese
• 400 ml low fat milk
• 50 grams smoked beef, thinly sliced
• 250 grams of champignon mushroom, thinly chopped
• 75 grams green olives
• ¼ teaspoons ground black pepper
• ½ teaspoons crushed red chilli pepper
• 3 tablespoons olive oil for saute
Pasta & Vegetables
• 250 ravioli pasta filled with cheese & tomato
• 400 grams Broccoli, Finely dice the broccoli stem and chop the
florets into small pieces (don’t over cooked the brocolli
otherwise it becomes soft)
• Water for cook ravioli & broccoli

Ingredients:
For Filling
2 tbsp Oil
1 1/2 Garlic Clove (chopped)
1/2 Green Chilli (chopped)
1 Onion (diced)
Salt
1 cup Button Mushrooms (chopped)
1/2 cup Spinach Leaves (chopped)
6-8 Basil Leaves (chopped)
Lasagna Sheets
1 1/2 tbsp Ricotta Cheese
Salt
Black Pepper (crushed)
1 tbsp Flour + 1 1/2 tbsp Water
For Ravioli
1 tbsp Butter (unsalted)
3 Basil Leaves
Method: Let's start with making the Filling for which add Oil in the Pan then add Garlic Clove (chopped), Green Chilli (chopped), Onion (diced), Salt, Button Mushrooms (chopped) then let it cook for 5-7 minutes. Next, after 5 minutes add Spinach Leaves (chopped), Basil Leaves (chopped) mix it then cook for another 2 minutes and let it cool down.
Next, heat up the water in the Shallow Pan and add Lasagna Sheets boil them till they become soft after this take them out in the Plate (as shown in the video).
Now, add Ricotta Cheese in the Filling with Salt and Black Pepper (crushed).
Next, mix it all together properly, then add the filling into cooked Lasagna Sheets with Flour + Water apply around the filling (as shown in the video) then take the Other sheet and place it on top.
Next, use the Cookie cutter to cut out the Ravioli from lasagna sheets. Now saute Ravioli in the pan for which add Butter in the Pan first then add Basil Leaves.
Now add the Ravioli into the Pan and fry them on both the side. Now your Homemade Mushroom Ravioli is ready to serve.

¼ cup Olive Oil
1 Garlic Clove
¼ Red or White Onion
¼ cup Tomato Paste
½ cup Heavy Cream
1 tsp Chilli Pepper Flakes
Salt to Taste
2 tsps Black Pepper
1 tbsp Vodka
¼ cup Pasta Water
1½ cups Pasta
1 tbsp Butter
¼ cup Parmesan Cheese
Garnish with Chopped Basil
METHOD:
1. Over high heat, add 1½ cups of pasta in boiling water. Cook for 7-8 minutes or until al dente.
2. Strain the pasta from the water but keep ¼ cup aside.
3. Over medium heat add ¼ cup olive oil, 1 diced garlic clove, 1/4 diced red or white onion in a sauce pan.
4. Cook for 5 minutes or until onions are soft.
5. Add ¼ cup tomato paste.
6. Cook until for 5-10 minutes or until the tomato paste turns into a dark red color.
7. Add ½ cup heavy cream. Stir it altogether.
8. Add 1 tsp chilli pepper flakes, salt to taste and 2 tsps black pepper. Stir it altogether.
9. Optional: Add 1 tbsp vodka.
10. Add ¼ cup of pasta water left over.
11. Add the cooked pasta, 1 tbsp butter and ¼ cup parmesan cheese.
12. Stir and cook for another 5 minutes.
13. Garnish with freshly chopped basil.
