Ingredients:
2 cups all-purpose flour (280g)
1 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar (200g)
1 1/2 cup chopped and pitted apricots (300g)
150 ml milk
100 ml vegetable oil
2 eggs
1 tsp vanilla essence
powdered sugar
Directions:
1. In a large bowl combine the flour with sugar, salt, and baking powder. Add the apricots and mix.
2. Add the oil, milk, vanilla essence, and eggs and gently mix with a spatula just to combine.
3. Pour the batter into a pan and bake at 170C for 45 minutes or until golden brow.

It’s not meant to look perfect, and it certainly can’t be called fancy, but it’s a fresh and flavourful fruit dish that exudes down-home cooking.

INGREDIENTS
8-12 apricots, unpeeled, washed and sliced (about 5 cups)
¼ cup of fresh-squeezed orange juice
2 tablespoons of granulated sugar
2/3 cup of all-purpose flour
¼ teaspoon of baking powder
1 pinch of salt
8 tablespoons of butter, plus a bit more to grease casserole dish, softened
½ cup of granulated sugar
1 egg, room temperature
½ teaspoon of pure vanilla extract
½ cup of blanched, sliced almonds
INSTRUCTIONS
1) Preheat oven to 375°F. Lightly butter an 8 x 11-inch glass casserole dish. Set aside.
2) In a medium-sized bowl, mix sliced apricots, 2 tablespoons of sugar and orange juice. Set aside. In a small bowl, whisk together flour, baking powder and salt. Set aside.
3) In another medium-sized bowl, cream the butter and ½ cup sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the flour mixture in three steps, mixing just until ingredients are combined.
4) Transfer apricot mixture into the buttered casserole dish. Drop batter in rounded tablespoons over apricot mixture. Try to cover as much of the fruit as possible. Sprinkle top with the sliced almonds, using your finger to gently pushing upright almonds down.
5) Bake in preheated oven for 40 minutes, until topping is golden brown and filling is bubbling.
6) Allow to rest for 15-30 minutes before serving with ice cream or whipped cream.

Hurray! It’s apricot season!!
Today we’re turning some freshly picked apricots into some delicious apricot cinnamon muffins
Super easy. Oil free. Freakin delicious
You’ll need-
About 15 fresh apricots de pitted. And blended up just a little bit
1 can coconut milk
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
Mix these ingredients in a bowl
To this add-
2 cups oat flour (I make mine in my blender... super quick and easy)
1/2 cup oats (for texture)
1/4 cup flax meal
1/2 cup swerve zero calorie sweetener
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
Mix into wet ingredients with a spatula and divide into muffin tins. Bake immediately at 350 degrees Fahrenheit for about 25 minutes. When toothpick comes almost clean. Turn off oven and let finish cooking while they cool.
Enjoy as is- or makes this super simple glaze
Using 1 can of coconut milk that has been in your fridge for at least overnight.
Separate the solids and blend them with about 1 cup of confectioners sugar. I used swerves zero calorie version. Add 1 teaspoon vanilla and you’re good to go.
Drizzle over cooled muffins and enjoy!!
