Betty's White Cheddar Cheese Sandwich with Red & Yellow Bell Peppers
Betty demonstrates how to make a White Cheddar Cheese Sandwich with Red and Yellow Bell Peppers. This sandwich is my version of the sandwich I ordered in our recent visit to Jonathan's at Gratz Park in Lexington, Kentucky. (You can see the real version in the video of our trip to Jonathan's.) This is a delightful blend of white Cheddar cheese, red and yellow bell peppers, and mayonnaise inside warm, toasted bread and dressed with lettuce and tomato.
White Cheddar Cheese Sandwich with Red & Yellow Bell Peppers
1 cup shredded white Cheddar cheese
¼ cup finely-chopped red bell pepper
¼ cup finely-chopped yellow bell pepper
½ cup mayonnaise
French or Italian bread, sliced about 5/8-inch thick and toasted
butter for toasting bread
fresh outer iceberg lettuce leaves
fresh thin-sliced tomatoes
Prepare your bread by slicing off two slices of Italian or French bread per sandwich. Spread a very small amount of butter on both sides of each bread slice. Place the slices in a skillet over medium heat and toast until browned and crunchy. Remove from heat and let cool a bit while you prepare your filling. In a small mixing bowl, add 1 cup shredded white Cheddar cheese, ¼ cup finely-chopped red bell pepper, ¼ cup finely-chopped yellow bell pepper, and ½ cup mayonnaise. Stir until well blended. Now, choose two slices of bread that match in size and spread the inner side of one of the slices with a generous amount of the Cheddar cheese filling. Top with 2 thin slices of tomato and 2 outer leaves of iceberg lettuce. Close up the sandwich, with the matching slice of bread, slice diagonally, and place on a serving plate. This sandwich is great with a dill pickle spear and potato salad alongside! I hope you enjoy it! --Betty

High Protein Chipotle Cheese Spread ! Super yummy & Healthy #easycooking
Chipotle Cheese Spread ! High protein & super healthy. 1 spoon of 20 g is about 4.5 protein
The reason why I love to make this at home is because I exactly know what all has gone into it. It tastes light , cheesy & is perfect for a cheese lover like me who wants to be healthy.
You need only 10 to 15 mins to make this !
1 litre Milk
2 to 3 tbsp Lime Juice + 2 tbsp water or you can use vinegar too
2 tsp Salt (this add to the flavour & will eventually be drained out)
This will give about 180 to 200 g Chenna (Don’t over squeeze & make like Paneer)
150 g Hung curd (300 g curd which is hung)
1 cheese cube
A little more salt
3 Kashmiri Red Chillies, soaked
2 to 3 tbsp Chopped Olives
2 to 3 tbsp Chopped Jalapenos
2 to 3 tbsp Chopped Sun Dried Tomatoes
1/2 tsp crushed oregano
1 tbsp chopped coriander
1 tbsp Crispy Garlic
A little black pepper

- Just make sure the curd is hung well & so is the chenna. We don’t it to be super liquidy
- Store in an Air Tight Container in the fridge
- Salt here will act as a preservative & this will give you about 350 g Cheese spread
Bell Pepper Sandwich MadeTwo Ways - Cream Cheese and Tuna Salad
Our bell pepper sandwich made two ways is simple and delicious. The first bell pepper sandwich is made with cream cheese, tomatoes, ham, lettuce, and other ingredients. The second sandwich is made with our famous tuna salad mixture. The outcome of both are incredible. Personally, I cannot decide which one I like the most. Actually, the sky is the limit in terms of what you add to these bell pepper sandwiches.
On a different note, this sandwich has become viral on the tiktok platform. I just had to discover why.
The great thing is you can make them with red, green, or yellow bell peppers. My personal preference is red. I just like that extra bit of sweetness.

Ingredients:
2 bell peppers sliced in half, seeds removed and washed
For the Cream Cheese Sandwich:
1/4 cup of herb and garlic cream cheese
4 sliced of deli ham
2 leaves of lettuce
4 slices of tomato
4 - 6 slices of cheddar cheese
salt and pepper to taste
For the Tuna Salad Sandwich:
1 can of tuna and water
1/4 cup of mayo
salt and pepper to taste
1/4 tsp of garlic
1/4 tsp of smoked paprika
1 tbsp of fresh cilantro
1 chopped green onion
1 squirt of lemon
Method:
For the First Sandwich:
Spread the cream cheese into the first half of the bell pepper followed by the, ham, lettuce, tomato and cheese.
Place the second half of the bell pepper over it.
For the Second Sandwich:
Add the tuna, may, salt, pepper, garlic, paprika, cilantro, onion, and lemon to a bowl. Mix until well combined.
Spread the tuna mixture into the first section of the bell pepper followed by the lettuce and tomato.
Grate some cheese over the top.
Serve and enjoy your bell pepper sandwiches.
Place the second half of the bell pepper over it.
Easy and Addicting Pimento Cheese Spread Recipe - Eat Simple Food
Recipe:
This addicting, easy, and delicious pimento cheese recipe is made with extra sharp cheddar, roasted red peppers, and mayonnaise. Add a pinch of ground cayenne pepper if you like a little spice.
Put pimento cheese on crackers, bread, veggies, steaks, etc... Eat it by the spoonful if necessity calls.
Pimento cheese stays good in an airtight container in the refrigerator for 2 weeks.
It took me 10 years of living in the South before I liked Pimento cheese. Then, I became obsessed with the recipe & dish. Obsessed - like dreaming about it - craving it, making it and eating nothing else.
My friend Kim gave it out as holiday gifts one year - her version had grated onions, just a bit, - don't skip it, but err on the side of less onions as the juice can be potent. Slowly add to taste.
Some people put cream cheese in their pimento cheese. If you like cream cheese go for it but I LOVE the mayonnaise version instead. The cream cheese is chunkier and a little more powerful, in my opinion.
Pimento is the Spanish word for a smaller cherry pepper. Buy whole roasted red peppers in the can and chop yourself - they are not as mushy as the pre-chopped. Pre-chopped works in a pinch though ????
Red peppers are great substitutes for smaller red pimento peppers. Wanna roast your own red pepper? The picture below shows how charred it should look with a little skin peeled away to reveal the vibrant red color underneath the char. You can do this on the grill or over an open flame gas stove.
Lay the red pepper directly on the grate above the stove burner and rotate as the skin turns black. You want charred black skin covering the pepper and the pepper becomes softer. That is when it is done.
Place it in a paper bag for 20 minutes to continue cooking so it gets softer. Run under cool water and take the skin off. Seed and chop.
Makes 3 cups
Ingredients
• 2 cups ( 8 oz) sharp cheddar cheese, grated
• ½ cup (4 oz) roasted red pepper, canned, drained, & diced
• 2 tsp onion grated
• pinch ground cayenne pepper (skip this if you are sensitive to heat)
• ½ cup mayonnaise
Instructions
• Add all ingredients to a bowl and mix.
• Add more mayonnaise if you want a creamier consistency.
• Add more cayenne and salt & pepper to taste if desired. Happy obsessive eating! Beckie
