How To make Red Curry Beef
28 oz Coconut Milk, 2-14 Oz. Cans
1 tb Red Curry Base
2 1/2 lb Beef Steak, Cut Into Strips
1 tb Lemon Zest
1/2 c Fish Sauce
2 ts Sugar
14 oz Baby Corn
3/4 c Peas, Fresh Or Frozen
1 ts Garlic Chili Pepper Sauce
GARNISH:
Chopped Sweet Basil, Fresh In a large saucepan, combine half of the coconut milk and curry base over low heat. When oil appears on surface, add meat. Simmer for 5 minutes. Add remaining ingredients, cover and simmer for 10 minutes, stirring occasionally. Serve over rice or Thai Jasmine Rice and garnish with sweet basil.

Red Beef Curry
Ingredients required for Beef Marination
500g Beef (with bones or without bones)
1 tbsp lime juice
Salt
Ingredients required for Red Masala Paste
10 Kashmiri chillies
1/4 tsp cumin seeds
6 cloves
1 1/2” cinnamon stick
12-15 peppercorns
3-4 garlic cloves
1 small fried onion (well browned)
1” ginger piece
1 tbsp vinegar
Tamarind (small lime size ball)
1/4 tsp turmeric powder
Water as required
Other ingredients required
1 large onion (finely chopped)
1 large potato (cut into 8 pieces)
1/2 tsp sugar
Curry leaves (optional)
Green Chillies (Optional)

A delicious Curry is truly a great recipe to know to make, it can be relatively cheap and easy to pull off you just need a little patience when using tougher cuts of beef. This Panang curry is one I think every aspiring home cook should have up their sleeve ready to deploy at a moment's notice.

Homemade curry paste recipe:
1 cup rough chopped shallots
2-3 sticks of fresh lemongrass
1/3 cup ginger or galangal
10 cloves peeled garlic
4 dried ancho chilis
4 guajillo chilis
1 tsp shrimp paste
Zest of 2 limes or 2-3 kefir lime leaves
1/3 cup cooking oil
2 tsp salt
Panang beef curry recipe: for 3-4 pounds of beef
1 tsp coriander seeds
1 tsp cumin seeds
2 tsp lime zest
2 13 1/2 oz cans coconut milk (reserve 2 tbsp for garnish)
3 tbsp fish sauce
6 tbsp curry paste
1 tbsp coconut or palm sugar
3 tbsp chunky peanut butter
salt to taste
Garnish with slivers of chili and lime zest (also kefir lime leaf)

1 tbsp light Olive oil
1 1/2tbsp red curry paste
270ml light coconut cream
330g scotch fillet, Sliced beef 1/2cm. thick
8 kaffir lime leaves (ideally fresh)
1/2 tbsp fish sauce
2 tbsp raw sugar
2. red chilli sliced diagonally
½. small pack of Thai basil
Garnish with basil, red chili or coriander
