How To make Red Tomato Salsa
2 tb Vegetable oil
1 md Onion, thinly sliced
4 c Diced canned Italian plum
-tomatoes 1 c Tomato juice
2 ea Garlic cloves, peeled
4 lg Jalapeno chile, stemmed,
-seeded if desired 1 ts Salt
Heat the vegetable oil in a medium skillet over moderate heat. Cook the onions until soft, about 10 minutes. Transfer to a food processor fitted with the metal blade or a blender. Add the remaining ingredients and puree, in batches if you are using a blender, until smooth. Pass through a medium strainer, pressing with a spatula or wooden spoon to push through as much pulp as possible. Pour into a saucepan, and add the salt. Bring to a boil, reduce to a simmer and cook, uncovered, 20 minutes. Adjust the seasonings. Set aside and cool for table salsa or use warm for red rice or chilaquiles. In this video we’re making a traditional salsa verde and a salsa roja. Both of these are estilo Monterrey, MX and courtesy of my good friend Ruben “El Borrego” Rios who made these for us during one of our epic bbq classes. Gracias Compadre!
For our salsa verde we’re gonna use seven tomatillos, three green jalapenos, two cloves of garlic, a head of cilantro and 2 tsp APC OG – which is salt pepper and garlic. This is a boiled salsa that is rich in flavor and can be a great base for other recipes like enchiladas suizas or just for topping tacos and your favorite plates.
Now the salsa roja is a little bit different but just as amazing. This recipe calls for seven red jalapeños, five roma tomatoes, two garlic cloves, seven chile de arbol, 2 tsp of APC OG and while blending…2 tablespoons of olive oil. This gives the salsa roja a creamy, smooth texture that is delicious with chips, some loaded ribs or any grilled meats.

This is such a delicious and easy salsa recipe that you are going to be obsessed with. It takes just five minutes and comes together in a blender with no effort at all!
RECIPES (lends approximately 2 cups of salsa)
2 14.5 oz cans Diced Tomatoes
1 red onion, roughly chopped
2 cloves garlic
2 jalapeño peppers, roughly chopped, deseeded if you don’t like spice
1 large handful cilantro
1 lime, juiced
1 teaspoon salt
1 teaspoon sugar

Blitz all ingredients in a food processor or blender until desired consistency. Enjoy immediately, or store in the fridge for up to 3 days.

HOMEMADE TORTILLA CHIPS

4 to 5 whole wheat or corn tortillas

Preheat the oven to 400F.

Slice the tortillas into “chip” sized triangles and disperse evenly across a baking sheet. Spray with oil to lend a crispier result.

Place in the oven for 3 to 4 minutes, until hard. Enjoy with salsa as desired.
