How To make Rice Patties
2 tb Oil
2 lg Onions, diced
1 Stalk celery, diced
2 Carrots, diced
1 Green pepper, diced
2 Garlic cloves, diced
6 tb Tamari
1/2 ts Garlic powder
1/2 ts Basil
1/2 ts Oregano
3 c Cooked rice
1/4 c Peanut butter
1/2 c Flour
In a large skillet, heat the oil over medium heat; add the onions and saute for 5 minutes, until golden. Add the celery, carrots, andpepper; saute for 5 minutes,, add the diced garlic, and saute for 5 minutes more until the vegetables are tender. Season with the tamari, garlic powder, basil and oregano. Remove from heat. Add the rice. Season to taste. Add the peanut butter and flour. Preheat the oven to 350 degrees. Oil a cookie sheet. Form the mixture into patties, and place on the cookie sheet. Bake for 5 to 6 minutes until crispy golden on top; turn over and bake for 5 to 6 minutes more. Variation Substitute kasha (buckwheat groats), cous cous or bulghur for the rice. 2.5 cups cooked rice 460g
2 cups grated zucchini 265g
½ medium onion grated 75g
Cumin seeds 1 tsp
Ground Red Chili powder ¼ tsp
Ground Coriander 1 tsp
Garam Masala 1 tsp
Ground Turmeric ¼ tsp
Salt 1 tsp
Ketchup or Cilantro yogurt for dipping.

A delicious snack made using leftover cooked rice.
LEFTOVER RICE TIKKI
Ingredients
1½ cups leftover cooked rice
3 tbsps oil
2 green chillies chopped
1 large onion, chopped
1 medium carrot, grated
¼ cup chopped French beans
3 tbsps boiled and mashed green peas
Salt to taste
1½ tbsps semolina
1 tsp red chilli powder
½ tsp garam masala powder
Tomato ketchup to serve
Method
1. Heat 1 tbsp oil in a non-stick pan, add green chillies and onion. Sauté till onion turns translucent.
2. Add carrot, French beans, green peas and salt. Mix well. Sauté for 2-3 minutes on medium heat.
3. Take leftover rice in a bowl. Add the cooked mixture and mix well. Add semolina, salt, red chilli powder and garam masala powder. Mix well. Divide mixture into equal portions and shape each portion into medium sized tikkis.
4. Heat remaining oil in a non-stick tawa, add tikkis and shallow fry on medium heat till golden brown on both sides.
5. Serve hot with tomato ketchup.
