American Cook chicken until tender. Remove meat from bones, cut into bite size pieces. Combine soup mix and pimintoes. Alternate layers of rice, chicken and soup mixture. sprinkle with cheese. Bake at 375 degrees until cheese is melted and golden brown.

Ingredients
Chicken marinade:
• 300g chicken breast cut into cubes • 1 tsp paprika • 1 tsp turmeric • 1 tsp cumin • 1 tsp garam masala • 1/2 tsp chilli powder • 1 tsp salt & pepper • 4 garlic cloves or 1 tbsp garlic powder • 100g fat free yogurt Mix well and marinate for 10 mins or more (the longer the better flavor) Cook on medium heat for 8 mins till golden brown
Yellow rice:
• 120g uncooked basmati rice (washed) • 1/2 tsp salt, turmeric & cumin Tip to make it fluffy: when the rice is 80-90% cooked, drain the water, turn off the heat and cover to let the rice cook in its steam for 5mins
For the sauce & cooking:
• 1 onion finely chopped • Add 1/2 tsp of the same seasonings used for chicken • 250g crushed tomatoes (passata) • 80-100g light cream cheese (brand: Philadelphia) - you can use yogurt or coconut milk instead Note: you may need to add a little water or passata to add more sauce - Add cooked chicken, mix and simmer then garnish with coriander - Serve with 140g of cooked rice per serving

Shopping List: 2-3 lbs Bone-in Skin On Chicken Thighs Avocado Oil 1 Onion 1 Red and Green Bell Pepper 3 cloves of garlic 1.5 tsps dried oregano (or italian seasoning) 2 cups long grain white rice (sub cauliflower rice for keto) 4 cups chicken broth/stock 1 tbsp better than bouillon chicken base salt, pepper, garlic, onion powder, cayenne smoked paprika, adobo Fresh chopped parsley Fresh thyme 2 tbsps butter
Directions: Season chicken generously on all sides and prep veggies. Heat skillet over medium heat, add avocado oil, and sear chicken for 1-2 minutes per side or until skin is golden brown. Remove chicken and add butter and veggies. Cook veggies until they begin to get tender and then add chicken base. Add rice and mix to combine. Toast rice for 2-3 minutes. Deglaze with white wine or chicken stock. Bring to a simmer and then add chicken broth. Bring back to a simmer and add chicken. (Add thyme here) Cover with a lid and reduce heat to a gentle simmer for 20-25 minutes or until chicken is fully cooked and rice is done. Season to taste and garnish with parsley.
