Black Bean Salad With Lemon Dijon Dressing By Risa
This is a delicious, low fat, easy, nutritious, high protein salad for meal prep or for any celebration, holiday or for company.
Enjoy it for lunch, dinner, snack, after work out, or as a side dish too! Versatile for Vegan, Vegetarians or anyone else who loves different proteins.

INGREDIENTS:
1 540 ml large can of black beans
1540 ml can of chick peas or any other bean
2 cups of a combination of red, yellow, orange peppers
1 cup of cucumber
1 cup broccoli
1/2 cup of orange and red grape tomatoes
*use any vegetables you prefer if you don't like these *
1/2 vidalia onion or any kind
1/2 cup of fresh parsley (or cilantro or any fresh herb)
Salad Dressing : double or triple the recipe if you want)
2 tbs, olive oil 6 Sp
1 tbs Dijon mustard
1 tbs sugar free honey ( can substitute for any sugar free syrup, Swerve, stevia or use regular sugar or honey)
1 tbs white wine vinegar
Salt and pepper to taste
1/4 tsp or more of lemon pepper seasoning.
Whisk together. Add right away or before you serve it.
Another dressing option is :
Fresh lemon juice and Clubhouse roasted pepper and garlic seasoning. Zero smart points!!!.
Sprinkle as much as you want.
Or add whatever dressing you want!!

Add chicken or turkey
Add hard boiled eggs
Add tuna
Add shrimp
Add tofu

THINGS YOU’LL NEED:
15-ounce can of light red kidney beans, drained and rinsed
15-ounce can of black beans, drained and rinsed
15-ounce can of garbanzo beans, drained and rinsed
1 green bell pepper
1 red bell pepper
1 small red onion chopped (about 1 cup)
3 cloves garlic minced
½ cup chopped cilantro
¼ cup olive oil
¼ cup red wine vinegar
2 tablespoons fresh lemon juice
1 teaspoon spicy chili flakes optional
1 teaspoon hot sauce or to taste – I like to use a couple tablespoons
Salt and pepper to taste

how to make the Easy quinoa roasted pepper and beans salad with miso dressing

Ingredients:
2x bell pepper
100g quinoa (cook with 300ml water)
120g cherry tomato
400g five beans (in vinaigrette)
For the dressing:
2x garlic clove
1x spring onion
5g ginger
2tsp olive oil
1tsp rice vinegar
1tbsp miso paste
Salt and pepper
Chives (optional)
Method:
1.cook the quinoa first,1 parts quinoa with 1.25parts water, when boiling turn the heat down and simmering about 20mins,take the pot away from the heat and open the lid, let the quinoa cool down.
2.slice the pepper and put them in an oven proof pan, add the garlic, ginger and spring onion, mixing well with olive oil and seasoning well, roast about 30mins(180c with fan)
3.when the pepper was ready, pick the good one and put the rest into a food processor, add miso paste and olive oil, rice vinegar, blend well for the dressing.
4.mix the beans with the dressing first and add the cooked quinoa ,cherry tomato in, mix well.
Sprinkle fine chopped chives, ready to eat.
