How To make Rocky Road Brownies
1 3/4 c Sugar
3/4 c Unsalted butter, softened
3 lg Eggs
4 Squares unsweetened
-chocolate; melted, cooled 2 ts Vanilla
1/2 c Unsweetened cocoa powder;
-preferably Dutch -processed 3/4 c All-purpose flour
1/4 ts Salt
1 c Milk chocolate chips
1 c Chopped walnuts
12 Marshmallows
Put rack in center of oven and heat to 350~. Generously grease 9x13 inch pan. Coat with flour, tapping out the excess. Use mixer to cream sugar and butter until fluffy. Add eggs and mix until thick and lemon colored, about 2 minutes. Mix in chocolate and vanilla. Add cocoa, flour and salt. Slowly mix in batter until combined. Stir in chips and walnuts. Lay marshmallows sideways in prepared pan, allowing 1 1/2 inch border around the inside edge of the pan and spacing them evenly. Spoon batter (it's very thick) over marshmallows to hide them as much as possible. Evenly fill in center of pan with remaining batter, not adding batter to space between marshmallows and sides of pan (batter will spread during baking and reach sides). Bake until toothpick inserted into center comes out moist from melted chocolate (not batter), 25 to 35 minutes. Let cool completely on rack. Cut into 12 squares. Refrigerate until chilled. Use wide metal spatula to carefully transfer brownies to serving platter. Wrap airtight. Can be made a day in advance and refrigerated or frozen up to 3 months. We should really call these Pot Hole Brownies in the South African style because the marshmallows collapse on baking, leaving holes.
INA’S TIP:
Replace the marshmallows with a 40 g pack of mini Marie or Tennis biscuits.

INGREDIENTS:
-- 8 oz (225 g) milk chocolate, coarsely chopped
-- 1/2 cup (125 ml) unsalted butter
-- 2 eggs
-- 1/2 cup (125 ml) brown sugar
-- 1 pinch salt
-- 1/2 cup (125 ml) unbleached all-purpose flour
-- 3/4 cup (180 ml) cashews, toasted and coarsely chopped
-- 1 cup (250 ml) miniature marshmallows
-- 1/4 cup (60 ml) sugar
-- 2 tablespoons (30 ml) water
-- 3 tablespoons (45 ml) 35% cream, warm

PREPARATION
=-- With the rack in the middle position, preheat the oven to 180 °C (350 °F). Line the bottom of a 20-cm (8-inch) square baking dish with a strip of parchment paper, letting paper hang over two sides. Butter the other two sides.
=-- In a bowl, over a double boiler or in the microwave oven, melt chocolate with butter. Let cool.
=-- In another bowl, using an electric mixer, beat eggs with brown sugar and salt until smooth. At low speed, add chocolate mixture and flour and beat until smooth. With a spatula, fold in half of the nuts and marshmallows.
=-- Spoon batter into the prepared pan. Bake for about 35 minutes or until a toothpick inserted in the centre of the cake comes out with lumps and not completely clean.
=-- Right out of the oven, sprinkle with remaining nuts and marshmallows. Let cool.
=-- Meanwhile, in a saucepan, bring sugar and water to a boil. Cook without stirring until mixture turns golden brown. Remove the pan from the heat and add cream. Bring to a boil, stirring until smooth. Cool slightly and drizzle over cooled cake. Serve warm or at room temperature.

Hi today I will share another variation of brownies
For the ingredients :
1 cup flour
1/2 tsp salt
1/2 tsp baking soda
50 g dutch process cocoa powder
170 g or 3/4 cup butter
60 g semi sweet baking chocolate
1 tsp vanilla
2 eggs
1 cup packed brown sugar
half cup unsalted peanuts
FOr the topping
1 1/2 0r 150 g cup small pink and white marshmallow (you might not use all)
150 g semi sweet baking chocolate
1/2 cup peanuts
100 g glazed cherries
50 g semi sweet baking chocolate for decor (optional)
