60g milk
10g fresh yeast
375g bread flour
9g salt
60g granulated sugar
3 medium eggs (150g)
150g softened butter
orange zest
lemon zest
● Shaping
180g chopped hazelnuts
50g brown sugar
cinnamon
ginger powder
orange zest
chocolate chips
melted butter
egg wash (1 egg + 1 egg yolk)

Breads Bakery Cheesecake Babka
Cheesecake and babka are an unexpected dynamic duo from Breads Bakery.
Babka traditional Easter Bread from Poland, Russia
Family Recipe / how to bake video of traditional rich coffee cake. Babka is baked at Easter time and often topped with the molded sweet cheese dessert Paska.
Rich Coffee Cake (Babka)
1 Pkg. Fast acting dry yeast 2-1/2 cups sifted flour
1 oz warm water 1/4 LB softened butter
1 cup scalded milk (cooled) 1/2 cup plus 1 TB sugar
1 TB sugar 1/2 tsp. salt
1 whole egg 1 tsp. vanilla
2 egg yolks 1 cup fruit: dark & light raisins (1/2 cup)
candied pineapple, mixed asst.
1. Sprinkle yeast over warm water in sauce dish.
2. Scald milk in saucepan and cool (discard “skin”)
3. Combine in large beater bowl; milk, yeast, 1TB sugar, eggs vanilla
Beat on Low until smooth.
4. Add 1/2 the flour and beat in remainder of flour. Beat on Medium till smooth.
5. Gradually add and beat in remainder of flour. Beat till well blended.
6. Place dough in large oiled bowl, oil top of dough as well.
7. Place in room temperature (or slightly warm) oven with pan of boiling hot water.
8. Let rise (about 1/2 to 1 hr.) till dough doubles.
9. Meanwhile, prepare 1 cup of fruit.
Pour boiling water over raisins and pineapple. Drain - clean out any stems.
Cut down big chunks. Dry on paper towel. Toss with a bit of flour.
10. Prepare 1 large bundt baking pan.
Butter well. Flour well. (Toss out excess flour). Sprinkle sugar on bottom and sides.
11. Transfer dough to mixing bowl and beat on low. (About 3 minutes)
12. Add sugar (1/2 cup plus 1TB), add salt, and butter (cut into 1/4” slices).
13. Beat on Medium until very elastic and dough comes off beater easily.
NOTE: Generally the white beater (not dough hook) is best.
14. Sprinkle in the fruit. May need to use dough hook or your hands
to incorporate the fruit uniformly.
15. Place dough in the prepared bundt pan and let rise a gain to almost full pan.
16. Bake at 340 degrees until browned and steel pick comes out clean.
17. Place plastic wrap topped with kitchen towel on soft pillow.
18. Gently turn out cake onto this pillow to cool.
Cottage Cheesecake| Russian Style| With Apple and Raisins
A delicious Cottage cheesecake that's so easy to make. In Ukraine and Russia its called Syrnik or Tvorozhnik. I called it Zapekanka (Sweet Casserole). Traditionally cooked with cottage cheese, eggs, flour, butter and raisins. This is my favorite interpretation of a famous recipe, the way I always cook it. You can eat cottage cheesecake with apple and raisins for a breakfast or as a dessert. Semi sweet, low-fat with notes of baked apple, orange zest and vanilla... no one can pass by.
If you want to get low-fat recipe, just do not add butter on top. Also its a perfect recipe for kids, healthy and yummy, they will love it.

Ingredients
800 g cottage cheese (1.8 lb)
3 eggs
1 cup raisins
1/2 cup sour cream
1/3 cup sugar (or to taste)
1/4 cup corn starch
1/4 tsp salt
1 teaspoon vanilla extract
50 g butter (optional)
1 apple
zest of 1 orange
Preparation
1. Preheat oven to 350 degrees F (180 degrees C).
2. Place cottage cheese, eggs, sour cream, sugar, corn starch, salt, vanilla extract into a bowl and blend until smooth.
3. Add raisins, cutted apple,orange zest and mix well.
4. Pour into a greased with butter dish.
5. Put chopped butter on top (optional).
6. Bake in the preheated oven for 60 minutes, or until golden brown.
Allow to cool completely.

P.S. For low-fat recipe just do not put butter on top.

Russian cousine - family recipe! Cheese babka or homemade cheesecake with raisins. Easy recipe, quick and wonderful! Low fat, low sugar, HEALTHY RECIPE!
INGREDIENTS:
2 LB farmers cheese or homemade soft cheese
3-4 eggs
3-4 tablespoons raw cane turbinado sugar
pinch of salt
3-4 tablespoons farina or hot cereal/CREAM OF WHEAT
1 teaspoon of softened butter to grease the baking form
bake 375 F for 40-45 minutes and let cool down before тturn over to plate
