UKRAINIAN UNSTUFFED (LAZY) CABBAGE ROLLS | my grandma's recipe
Today I'm sharing my grandma’s Ukrainian Unstuffed Cabbage Rolls made with any ground meat, rice, chopped cabbage and savory tomato sauce. She would roll cabbage rolls before work but on busy days she made this lazy man version. ⬇️⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️
►INGREDIENTS:
1 large onion, chopped
4 garlic cloves, minced
1 tbsp oil
1 lb ground turkey or any meat
1 cup brown rice, uncooked
3 lbs cabbage, coarsely chopped
28 oz can tomato sauce, low sodium
14 oz can diced tomatoes, low sodium
2 cups water or any low sodium stock
1 tbsp oregano, dried
1 tsp thyme, dried
1 tbsp vinegar
1 tbsp honey, maple syrup or sugar
1 tsp salt
Ground black pepper, to taste
3 bay leaves
Fresh dill, parsley, green onions and yogurt/sour cream for serving

►DIRECTIONS:
1. Preheat large and very deep non-stick skillet or 5-6 quart Dutch oven on medium-high heat and swirl oil to coat. Add onion and garlic; cook for 5 minutes, stirring occasionally.
2. Add turkey, rice, oregano, thyme, salt and pepper; cook for 10 more minutes, breaking into small pieces and stirring often.
3. Add broth, tomato sauce, diced tomatoes, vinegar, maple syrup, cabbage, bay leaves and stir well. Bring to a boil, cover, reduce heat to low and cook for 60-70 minutes. Do not open!
4. After check if rice is cooked and if not (mine was) add 1/4 cup water, cover and cook for another 5 - 10 minutes.
5. Serve warm topped with Greek yogurt and herbs.

Incredible gravy that my mom and my grandma made for this recipe that is how we make them. Enjoy with mashed potatoes or good bread. Most of Europe is claiming inventing this recipe. Very popular in eastern Europe. Great to reheat the next day.

Stuffed Cabbage Rolls Recipe with Sauerkraut Hungarian German Rice
Vanessa shows you how to make cabbage rolls from start to finish using a traditional Transylvanian recipe. If you don’t have access to sour cabbage heads Vanessa tells you about a couple of workarounds. To get started you’ll need sour cabbages, sauerkraut, sauerkraut juice, ground pork, rice, onions, sea salt, pepper, eggs, parsley is optional, and bacon is optional. Make as many as you like, but it's a good idea to make a big batch. Here Vanessa uses 4 heads of sour cabbage to make around 60 cabbage rolls.

Vanessa’s birthplace was located 50 meters from her Godmother’s famous Paulick Villa – the Summer Playground to Vienna’s Elite Art Noveau Community including Gustav Klimt, Egon Schiele, Richard Teschner and Friedrich Paulick at the turn of the 19th century.
In fact, the aunt of Vanessas’s Godmother, Gertrude Floege, was the famous fashion designer Emelia Floege – life companion of the famous artist Gustav Klimt who frequently painted at the Paulick Villa..
Also the last Countess Maria dei Medici, who lived adjacent to the Eschen Villa hand wrote a poem for Vanessa as a child… Not many People can say that!
Vanessa got her teaching Degree in Salzburg but her real love and talents were for cooking.. after moving to Vancouver Island, she honed her chef skills under the eye of her brother in law Dieter von Schellwitz who had been the first executive chef at the famous Ilikai Resort in Waikiki, and had chef career in New York and San Francisco.
