How To make Saffron Pasta

Pasta with saffron, bacon and zucchini - Pasta con zafferano, pancetta e zucchine
Ingredients:
- Pasta
- Saffron
- 200 ml Cream (thick/double cream)
- 2 small Zucchini
- 1 Shallot

Cook the bacon until crispy in a pan and mince it with a knife. In the same pan add the diced shallot (cook it in the bacon's fat).
After few minutes add the diced zucchini and cook at low-medium heat for 10 minutes.
Add the cream and the saffron and cook for two more minutes. Cook the pasta and drain it 3 minutes before the recommended cooking time is over (keeping some of its water).
Cook the remaining 3 minutes in the pan with the sauce adding some of the pasta’s water.
Serve adding the crispy minced bacon on top!

Ingredients:

•Big glug of olive oil
•6 cloves of garlic
•Half zest of a lemon
•1 tbsp chilli flakes
•1 patch of cherry/ plum tomatoes
•big pinch of salt
•Small pinch of saffron (tip of a teaspoon)
•1.5 cups of orzo
•half a bag of spinach
•3 cups of 1 veggie stock cube
•Half lemon juice
•Half bunch of parsley

This Saffron Sauce recipe is simple to make, versatile and goes great with both poultry and seafood. Its rich creamy consistency is a wonderful accompaniment for many dishes.
