How To make Saganaki (Fried Cheese)
Karen Mintzias 1/3 lb Kefalotyri or kasseri cheese
2 tb Butter
1 Lemon (juice only)
Cut the cheese into bite-sized cubes. Melt the butter in a "saganaki" (or another frying pan), and fry the cheese on all sides until crusty and chestnut colored. Saganaki is a Greek pan fried cheese that served as an appetiser.

Ingredients
- 150g Greek kefalograviera, 1cm thick
- a bowl of water
- plain flour
- extra virgin olive oil, for frying
- Lemon, for serving
Method
1. Dip the cheese into a bowl of water.
2. Lightly coat the cheese with flour and shake off the excess flour. The flour creates a nice golden crust when the cheese is frying.
3. Heat a heavy based pan or a non stick pan over medium heat until it’s very hot. Drizzle some oil and heat until hot. Add the cheese and fry for about a minute on both sides until it’s lightly golden. Remove from pan and serve immediately. Squeeze fresh lemon juice over the saganaki and enjoy.

Here is the Greek flaming Cheese (Saganaki)
Saganaki is basically a Greek cheese that’s been pan fried. It has a gorgeous crispy crust on the outside and it’s soft melted cheese on the inside. It’s topped with a squeeze of lemon to cut through the richness. It makes the perfect appetizer to start any meal. This version is flambeed with brandy which is not traditional but adds another layer of flavour. Serve it with black kalamata olives, a crisp salad and crusty bread for an amazing experience.

How To Make Greek Saganaki (Fried Cheese)
Saganaki is an amazing treat you can make ! its super easy and only takes a few mins to throw together if company comes over !! Make lots as it goes fast !
How To Make A Greek Saganaki
150g cheese Graviera kasseri, or gryure
100g plain flour for coating
2 tbsp olive oil for frying
1oz metaxa
1/2 lemon
Start by adding the oil to the frying pan set to med heat.
dip the cheese in water and then coat with the flour.
Carefully add the cheese to the pan. Cook 3 mins per side or until golden brown.
Add in the Brandy and light on fire being careful.
Remove from pan and squeeze lemon over and serve with a salad
