Ingredients and recipe:
Slice 2 peeled potatoes
Butter a baking dish
Place the potato into the dish
Pour 150ml into a pan
Pour 150ml cream into the pan
Chop 2 cloves of garlic
Add to the pan
Salt and black pepper
Pour on top of the potatoes
Bake for 30 minutes at 150°C/300°F
80g mozzarella cheese
After 30 minutes
Sprinkle the cheese on top
Bake for another 15-20 minutes at 180°C/356°C
Sprinkle parsley on top (optional)

Salmon and Spinach Casserole
This salmon and spinach casserole is a perfectly rich and creamy dish layered with potatoes, creamed spinach, and fresh salmon for the perfect bite every time!

INGREDIENTS:
300 g (10 oz) frozen spinach, defrosted, squeezed;
2 garlic cloves, minced;
1 onion, chopped;
2 tbsp olive oil;
1 cup milk;
3 tbsp flour;
3 tbsp butter;
2 cups cheese, shredded;
4 cups mashed potatoes;
500 g (1 pound) canned salmon, drained.

Thinly sliced potatoes are combined with butter, cream and tons of cheese before being baked to a bubbly, golden perfection. Simple to prepare and fantastic for entertaining.

INGREDIENTS
3 ounces Butter
1 garlic clove minced
4 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
2 cups low-fat milk
2 cups shredded white cheddar
5 cups thinly sliced yukon gold potatoes
INSTRUCTIONS
Preheat oven to 350°.
In a large saucepan, melt the butter over low heat. Stir in the garlic and cook 1 minute. Whisk in the cornstarch, salt and pepper until smooth.
Gradually add the milk and bring to a boil. Cook the sauce stirring constantly until thickened, approximately 2-3 minutes.
Remove from heat and stir in 1 1/2 cups of the cheese until melted. Stir in the potatoes.
Transfer to a 2 quart baking dish coated with cooking spray. Sprinkle with the remaining cheese. Cover and bake 30 minutes. Uncover and bake an additional 30-45 minutes or until the potatoes are tender and the sauce is golden brown and bubbling.
Remove from the oven and allow to stand 5-10 minutes before serving.

Salmon & Potato Gratin
Salmon & Leek Gratin
Ingredients
2 Leeks
200g Smoked bacon, chopped
Glug Olive Oil
1 clove garlic, peeled
Knob of butter, plus extra for greasing tin
1kg Potatoes, Peeled and thinly sliced
250g salmon fillet, skinless, chopped in 2cm chunks
450ml cream (Double, single or half cream & half milk)
2 - 3 tablespoons parmesan, grated
Salt & Pepper
Method
1. Heat oven to 180C/ 160C fan. Slice the leeks into thin slices and wash thoroughly, to remove any dirt. Heat the oil and butter in a large pan over a medium heat. Add the leeks and chopped bacon to the pan and cook for a few minutes until the leeks become soft and tender. Using a fine grater, mince the garlic into the pan and continue to cook for a couple more minutes.
2. Grease a suitably sized oven proof dish. Line the base of the dish with a third of the sliced potatoes. Spoon half of the softened leek and bacon mixture on top along with half the salmon. Layer with another layer of potato and repeat the leek, bacon and salmon layer and add a final layer of potato.
3. To the pan you cooked the leaks in. Heat the cream until almost boiling point. Season well with salt and pepper. Carefully pour the hot cream over the gratin. Sprinkle the parmesan over. Cover with foil and place in the oven. Cook for 60 minutes covered with foil, then carefully remove the foil and cook for a further 30 minutes until bubbling and blistered on top. Potatoes should be tender when pierced with a knife. Allow to stand for 10 minutes before eating.
