Homemade Cheesy BAKED SALMON AND VEGGIE CASSEROLE | Recipes.net
Skip the meats and try out some salmon for your next casserole dish! This casserole is loaded with salmon fillets, potatoes, bell peppers, and mushrooms with some cheesy and creamy sauce. Make sure to top it off with some cheese then bake for only 35 minutes!

Ingredients:
1¼ lb salmon fillet, skin off and cut into chunks
10 oz green or any bell peppers of your choice, cut into cubes
10 oz potatoes, salt-baked, peeled & cut into chunks
7 oz mozzarella cheese, grated
5½ oz yellow onions, minced
5 oz shiitake or any fresh mushrooms of your choice, quartered
3 oz processed cheese, grated
4 cloves garlic, minced
1¼ cups heavy cream
1¼ cups yogurt or sour cream
½ cup white wine
6 tbsp olive oil, divided
4 tbsp fresh parsley, chopped
1¼ tbsp paprika, divided
Salt and ground black pepper to taste

0:11 Prepare your sauce first. In a saucepot, combine the processed cheese, heavy cream, yogurt, parsley, and half of the paprika then bring to a simmer.
0:26 Once the cheese has melted, season with salt and pepper. Adjust accordingly and set aside.
0:34 Heat up 2 tablespoons of oil in a skillet over medium heat. Add your mushrooms and saute for roughly 8 to 10 minutes until caramelized. Set aside.
0:41 Preheat the oven to 350 degrees F.
0:43 Heat up your remaining oil in a wide skillet over medium heat. Add your bell peppers, onions, and garlic. Saute until translucent.
0:55 Add your salmon chunks and saute for roughly 8 to 10 minutes until salmon turns opaque.
1:02 Dust with the remaining paprika and roast briefly.
1:07 Deglaze with white wine and reduce briefly.
1:13 Add sauteed mushrooms and baked potatoes, then mix to combine evenly.
1:19 Season with salt and pepper and adjust accordingly.
1:27 To assemble the casserole, place the salmon mixture at the bottom of your preferred baking casserole, then pour the prepared sauce.
1:30 Sprinkle the mozzarella cheese on top and bake in the oven for roughly 35 to 40 minutes or until cooked through and cheese is browned.
1:40 Garnish with ¼ teaspoon parsley per serving and serve immediately once baked!

Hi Neighbours, Hope you are all doing well. Today is a recipe that is a great budget meal. It is easy and inexpensive. The potatoes come out like a creamy scallop potato and the salmon really does taste nice in this dish. My Mom would often make dishes using can fish or meat.
I hope you enjoy the video. I am doing this in collaboration with my friend Linda over at create with Linda. Linda and I want to bring you budget meals . Below is the recipe and ingredients.
Servings: 4-6
Cook time: low 6-7 low or 3-4 on high . Until Potatoes are nice and soft
4 large or medium potatoes, peeled and thinly sliced or 6 small potatoes
3 Tbsp. flour
salt and pepper
1 can (16 ounces) salmon, drained and flaked ( you can get away with a bit less)
1 medium onion, I diced mine small
1 can (about 10 ounces) cream of mushroom soup
1/4 cup water
nutmeg
Place half of the potatoes in greased slow cooker. Sprinkle with half of the flour, salt and
pepper. Cover with half the salmon; sprinkle with half the onion. Repeat layers until done.
Combine soup and water. Pour over potato-salmon mixture. Dust with nutmeg. Cover
and cook on Low for 7-10 hours.
