Learn how to make Sambar - South Indian Lentil and Vegetable Curry - Vegetarian Recipe By Ruchi Bharani
In this episode, Chef Ruchi Bharani, makes simple to cook and quick to serve popular south Indian Recipe - Sambar. Sambar goes well with most of the South Indian Breakfast and main course dishes like Idli, Vada and Dosa. It is also a traditional accompaniment in a complete south indian meal to steamed rice.
Sambar is a vegetable stew / soup made with tamarind and toor dal. Its a very Important and popular food of southern regions of India especially in Tamil Nadu, Kerala, Karnataka and Andhra Pradesh. Each state in the South prepares it with a typical variation, adapted to its taste and environment.
Ingredients:
1 cup split yellow Pigeon Peas ( Tur Daal )
1 Onion cut lengthwise
2 Tomatoes chopped
1 cup Bottle Gourd ( Lauki ) chopped
1 Drumstick chopped into 3 inches pieces and slit
Coriander Leaves
2 tbsp Oil
1 & 1/2 tbsp tamarind juice
1 tsp White Lentil (Urad Dal)
2 tbsp Sambar Masala
1 tsp Mustard Seeds
Few Curry Leaves
Salt
4 Red Round Chillies ( Boriya Chillies)
1 tsp Red Chilli Powder
1/2 tsp Turmeric Powder
Jaggery ( Gur )
Method:
- Soak the tur daal for 1/2hr, add 2 cups of water & pressure cook it
- Add oil to the heated pan and add mustard leaves, boriya chillies.
- Once the mustard seeds starts sparkling, add white white lentils and cook till its golden brown
- Add the curry leaves, onions and cook them well without making it brown.
- Add bottle gourd, drumsticks and saute it for few mins.
- Add tomatoes and salt and let it cook for few minutes by putting the lid on the pan.
- Meanwhile churn the tur daal to a smmoth paste.
- Add sambhar masala, red chilli powder, turmeric powder to the vegetables and mix everything well.
- Add the churned daal, stir and mix everything well again.
- Add enough water, tamaring juice, coriander leaves, salt and a cube of jaggery and cook it for another 15 - 20mins in low flame and its ready to served.

Ingredients for Instant Sambar
Tuvar Dal - अरहर की दाल - 2 tbsp
Bottle Gourd - लौकी - 1 small piece
Pumpkin - कद्दू - 1 small piece
Carrot - गाजर - 1 small piece
Tomato - टमाटर - 1
Drumstick - मुनगा की फली - 1
Green Chilli - हरी मिर्च - 2
Ginger - अदरक - 1 tsp, grated
Turmeric Powder - हल्दी पाउडर - 1/2 tsp
Salt - नमक - 1.5 tsp
Sambar Masala - सांभर मसाला - 2 tbsp
Kashmiri Red Chilli - कश्मीरी लाल मिर्च - 1/2 tsp
Tamarind Pulp - इमली पल्प - 2 tbsp
Coriander Leaves - धनिया पत्ता - 1-2 tbsp
For Tadka:
Oil - तेल - 1 tbsp
Mustard Seeds - सरसों - 1/2 tsp
Fenugreek Seeds - मेथी दाना - 1/4 tsp (optional)
Asafoetida - हींग - 1/2 a pinch
Curry Leaves - कड़ी पत्ता - 10 - 12
Red Chilli - लाल मिर्च - 2
Kashmiri Red Chilli - कश्मीरी लाल मिर्च - 1 pinch
How to prepare an Instant sambar?
1. Wash and soak 2 tbsp of arhar dal/Pigeon pea in lukewarm water for 20-25 minutes.
2. Chop bottle gourd (lauki), pumpkin, 1-tomato, carrot, and 2 green chiles into bite-size. Take a drumstick and cut it into 1 or 1.5 inch pieces.
3. Take 1 tbsp of tamarind/imli and soak it in 1/2 cup of warm water for 30 minutes.
4. After 20 minutes, add soaked dal and 1 tbsp of water to the mixer and grind the dal coarsely.
5. Add coarsely ground dal, 1.5 cup of water, chopped veggies, 1/4 tsp of turmeric powder, 1.5 tsp of salt to the cooker.
6. Cook the sambar for a whistle.
7. Mash the imli and filter out the pulp using a strainer.
8. After a whistle, cook the sambar over low heat for 2 minutes. Once cooked, take the sambar out on a plate.
9. Add 1 more cup of water, 1/2 tsp of red chili powder, 1 tbsp of sambar masala, 1 tbsp of grated ginger, some chopped coriander, 2 tbsp of tamarind pulp to the sambar, and cook it for 3-4 minutes.
11. Take the sambar out in a bowl and heat 1 tbsp of oil in the Tadka pan.
12. Add 1/2 tsp of mustard seeds, 1/4 tsp of fenugreek seeds, 1/2 pinch hing, 10-12 curry leaves, 2-red chilies, 1-pinch red chili powder to the oil, and mix well.
13. Mix Tadka to the sambar, and Instant Sambar is ready to be served.

Vegetable sambar recipe || how To Make South Indian sambar
Toor dal/pigeon pea : 200 grams
Vegetables : 500 grams (I used drumsticks, brinjals and tindora)
Medium size tomatoes : 3
Medium size onions : 2
Green chillies : 4
Chilli powder : 1 to 1 and 1/2 tsp
Turmeric powder : 1/2 tea spoon
Hing/ asifoetida : 1/4
Salt to taste
Tamarind : medium lemon size
Chopped coriander leaves : 1/2 cup
Sambar masala powder : 2 table spoons
For tempering/tadka
Oil : 2 table spoons
Mustard seeds : 1 tea spoon
Fenugreek seeds : 1/4 tsp
Curry : 3 to 4 strings
Hing / inguva : 1/4 tsp
Small sliced onion : 1
Dried red chillies : 2
Servings : 6 to 8 persons
