How To make Sausage'N Egg Brunch Special
1/2 lb smoked sausage
12 oz frozen shredded hash brown potatoes -- thawed
1/2 c sour cream
1/4 c milk
1/2 c shredded cheddar cheese
1 tbsp chopped chives
4 eggs
Preheat oven to 350. Combine potatoes, sour cream, milk, cheese and chives in medium bowl. Spoon into buttered shallow 2-qt rectangular casserole. Bake 40 minutes. Cut sausage into halves lengthwise, then cut crosswise into bite-sized pieces. Arrange down center of casserole. Bake 10 minutes more. Shape a well in each corner of the potato mixture. Break an egg into each well. Bake 10 to 12 minutes more or until eggs reach desired doneness. Serve immediately.

For ONE single muffin. That can really mount up to quite an expensive breakfast especially if you take the whole family. So I have revived my old recipe, so you can easily make the iconic sausage and egg mcmuffin at home for £1.50 or less. A tip for you, once the patty mix has been combined, take a pinch off and fry it. Taste it, and if you want more salt, herbs, pepper you can add more before forming into patties.

To make my double sausage and egg mcmuffin you will need:
Makes 4 doubles (prices as of 3/3/2023 and subject to change)
►500g pork mince 12% fat (Lidl £2.25)
►4 Cheese slices (Lidl £1.19 for 10)
►4 eggs for frying (Lidl £1.89 for 6)
►4 breakfast Muffins (Lidl £0.79 for 4)
►1/2 tbsp of onion powder
►1/2 tbsp dried sage
►1 tsp of fresh or dried thyme
►1 tsp salt
►1 tsp black pepper

Ingredients
* 1 can Pillsbury Crescents (8 in a can)
* 8 slices of cooked bacon
* ½ red bell pepper, chopped
* ½ green bell pepper, chopped
* 5 eggs
* 1 cup cheddar cheese, shredded
* salt and pepper to taste
* Sausage
Instructions
1. Preheat oven to 375 F degrees.
2. In a bowl beat the eggs and add the chopped peppers to it and stir. Season with salt and pepper. Cook the eggs in a skillet so that they're scrambled.
3. Lay out the crescent on a parchment pepper, like a star as shown in the picture above.
4. On each crescent lay a piece of bacon. Add half of the cheese around the ring. Add the scrambled eggs around the ring and top with remainder of the cheese. Add Sausage
5. Fold the crescents over
6. Bake for about 20 minutes or until the crescents are cooked and golden brown.

Ingredients
1 pound bulk breakfast sausage
1/2 cup onion finely diced
1/4 cup parsley finely chopped
1 cup cheese shredded, divided
6 each eggs
salt
pepper
Instructions
Remove the sausage from the casings if needed, then mix the sausage with the finely diced onion and parsley. Mix well.
Divide the sausage meat between the muffin cups. Press the sausage evenly into the muffin cups, pressing it high up the sides. Cover as much of the inside of each muffin hole as you can.
Bake the sausage in the muffin tin at 350-F for about 10 minutes. Remove from the oven and put a good pinch of shredded cheese into the sausage-lined cup. Put it on top of the sausage in the muffin hole. Top this with an egg and a small sprinkle of cheese. Top with a few grinds of fresh pepper and a tiny sprinkle of salt.
Bake in the oven at 375-F for 5-10 minutes depending on how done you like your eggs. Enjoy!
