How To make Scandinavian Rasberry Soup
20 oz (2 pk) Red Raspberries *
1/2 c Orange Juice
1/4 c Lemon Juice
1 T Cornstarch
3/4 c Chablis **
1 x Fresh Orange Sections
1 x Granishes ***
1 x Sour Cream
* Raspberries should be the frozen in syrup kind and be thawed. ** You can use other dry white wines in this soup, but just white wines *** Garnishes to include Raspberries, Orange Rind Twists or Mint Leaves. ~-------------------------------------------------------------------------- In blender container, puree 1 package raspberries, strain to remove seeds. In medium saucepan, combine pureed raspberries, orange juice, lemon juice and cornstarch; mix well. Over medium heat, cook and stir until slightly thickened and clear; cool. Stir in remaining package of raspberries and chablis. Chill. To serve, place several orange sections in each bowl; add soup. Garnish as desired; serve with sour cream. Refrigerate left- overs.

The traditional Nordic rice porridge called risengrød in Denmark or Risgrynsgröt in Sweden is served on Christmas Eve. The tradition includes giving the Nisse or Tomte a bowl of Christmas rice porridge. In our video, Kare Grete explains her Danish family Christmas Eve tradition and childhood memories with the Danish risengrød and the Nisse. Our video shows you how to make risengrod or how to make risgrynsgrot from scratch.
Ingredients:
two cups of water
cold water for rinsing rice
four cups of milk
1 cup of rice
cinnamon
butter
Serve with black currant juice or red currant juice
Another Danish favorite rice (grødris) dessert is the delicious risalamande served in Danish homes during their Christmas celebrations. Be sure to check out our video for this delicious Danish Christmas dessert too.
However, who said we have to wait until Christmas to enjoy a bowl of warm rice pudding with cinnamon sugar on top? It is a perfect dessert to have during the winter season. If you have left over, Danish rice pudding, you can make the Danish Klatkager (Danish pancakes) another day. Theses are small size American pancakes. Be sure to see our Klatkager video too
